These Zucchini Tacos are a quick and delicious vegetarian meal perfect for a weeknight dinner. Tender zucchini chunks are seasoned and sautéed before being topped with melted Mexican cheese in warm, crispy flour tortillas.

Ingredients

Ingredients

  • 1 tablespoon avocado oil, plus more for brushing the tortillas
  • 2 medium zucchini, chopped into 1/2-inch pieces
  • 1 tablespoon taco seasoning
  • 1 cup shredded Mexican cheese blend
  • 6 flour tortillas

Instructions

  1. Preheat oven: Preheat the oven to 450°F (232°C) to prepare for baking the assembled tacos.
  2. Heat oil: In a large skillet, add 1 tablespoon of avocado oil and heat it over medium-high heat for about 30 seconds until hot.
  3. Cook zucchini: Add the chopped zucchini and taco seasoning to the skillet. Stir well to evenly coat the zucchini pieces with the seasoning.
  4. Sauté zucchini: Cook the zucchini over medium-high heat for 7-8 minutes, stirring occasionally, until the zucchini becomes tender and starts to brown slightly.
  5. Assemble tacos: Lightly brush the bottom of each flour tortilla with a little avocado oil. Then distribute the cooked zucchini evenly on each tortilla and sprinkle with shredded Mexican cheese.
  6. Fold tortillas: Fold each tortilla in half over the filling to form taco shapes.
  7. Bake tacos: Place the folded tacos on a baking sheet and bake in the preheated oven for 8-10 minutes or until the tortillas are golden brown and the cheese is melted.

Notes

  • You can use corn tortillas instead of flour for a gluten-free option, but brush gently as corn tortillas are more delicate.
  • For extra flavor, add a squeeze of fresh lime juice or some chopped cilantro before serving.
  • Adjust the taco seasoning amount based on your spice preference.
  • Check the tacos midway through baking to ensure they do not burn; oven temperatures may vary.
  • Serve with your favorite salsa, avocado, or sour cream to complement these vegetarian tacos.
