This Whole Roasted Cauliflower recipe delivers a beautifully cooked and flavorful centerpiece that's perfect as a vegetarian main or an impressive side dish. The cauliflower is seasoned with a smoky and aromatic spice blend, slow-roasted until tender and golden, then drizzled with a creamy homemade tahini sauce. Garnished with fresh mint, pepitas, pepper flakes, and served over peppery arugula, this dish combines texture and vibrant flavors for an elegant yet simple meal.

Ingredients

Cauliflower

  • 1 head cauliflower (approximately 2 lbs)
  • 1/3 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ¼ teaspoon kosher salt

Tahini Sauce

  • ¼ cup tahini
  • 1 tablespoon olive oil
  • ¼ cup fresh squeezed lemon juice
  • 2 cloves garlic, minced
  • ¼ teaspoon kosher salt
  • 1-2 tablespoons cold water (to thin sauce, if needed)

Garnish

  • 2 tablespoons pepitas
  • 2 teaspoons fresh mint leaves, chopped
  • Pinch crushed red pepper flakes
  • Pinch sea salt or flake salt
  • Arugula leaves tossed with olive oil, salt, and pepper

Instructions

  1. Prep Cauliflower: Remove the outer leaves from the cauliflower and carefully trim the bottom to create a flat base, ensuring the head remains whole. Wash thoroughly and pat dry with paper towels.
  2. Preheat Oven: Set your oven to 425 degrees Fahrenheit to prepare for roasting.
  3. Make Seasoning: In a small bowl, combine 1/3 cup olive oil, garlic powder, smoked paprika, ground cumin, and kosher salt to create a flavorful spice blend.
  4. Season Cauliflower: With the core side up, drizzle the spice mixture over the cauliflower and use a pastry brush to evenly coat it. Flip the cauliflower to its top side and brush seasoning there as well.
  5. Roast Cauliflower: Pour 1 tablespoon of water into the bottom of an oven-safe pan to keep moisture. Place the cauliflower in the pan, cover with a lid or aluminum foil, and roast for 45 minutes. Remove the cover and roast an additional 10-15 minutes until the top is browned and crisp.
  6. Prepare Tahini Sauce: Combine tahini, olive oil, lemon juice, minced garlic, kosher salt, and if necessary, 1-2 tablespoons cold water to thin the sauce. Taste and adjust the seasoning as desired.
  7. Serve and Garnish: Arrange a bed of arugula in a serving dish. Carefully lift the roasted cauliflower from the pan using a large spatula (or two spatulas). Drizzle the tahini sauce over the top and sprinkle with pepitas, freshly chopped mint, crushed red pepper flakes, and a pinch of flake salt.
  8. Serving Suggestion: Slice the cauliflower into wedges, similar to cake slices or steaks, to serve.

Notes

  • The cauliflower should be dried completely before seasoning to help the spices adhere better and promote browning.
  • If you don’t have a lid for your roasting pan, use aluminum foil tightly to cover the cauliflower during the initial roasting phase.
  • The tahini sauce can be made ahead and refrigerated; add cold water to achieve desired consistency before serving.
  • Arugula adds a peppery contrast but can be substituted with baby spinach or omitted if preferred.
  • For extra crunch, lightly toast the pepitas before garnishing.
