Ingredients

Queso Base

  • 12 oz. evaporated milk (1 can)
  • 1 tbsp cornstarch
  • ¾ lb. white American cheese, cut into cubes
  • 4 oz. freshly shredded mozzarella cheese

Seasonings and Add-ins

  • 2 tbsp chopped canned jalapeños (or chopped green chiles)
  • 1 tsp chili powder (or cumin)
  • ½ tsp ground nutmeg (optional)
  • 1 tsp red pepper flakes
  • ¼ tsp kosher salt
  • ¼ tsp ground black pepper

Garnishes

  • Chopped fresh cilantro
  • Chopped tomatoes
  • Extra chopped jalapeños (optional)

Instructions

  1. Heat evaporated milk: In a small saucepan over medium-high heat, warm the evaporated milk, stirring occasionally to prevent scorching.
  2. Mix cornstarch: Stir in the cornstarch and whisk thoroughly to combine, ensuring no lumps remain.
  3. Simmer: Bring the mixture to a simmer, just before boiling, when bubbles form around the edges of the pan.
  4. Reduce heat: Immediately lower the heat to low to avoid burning and to prepare for adding the cheese.
  5. Add white American cheese: Gradually add the white American cheese cubes in batches. Whisk constantly while gently increasing heat to medium-low, stirring until each batch melts into a smooth, creamy texture.
  6. Add mozzarella cheese: Once the white American cheese is fully incorporated, add the shredded mozzarella incrementally. Continue whisking constantly to achieve a thick and creamy mixture. Add more mozzarella if a thicker consistency is desired.
  7. Incorporate seasonings: Stir in the chopped jalapeños, chili powder, nutmeg, red pepper flakes, kosher salt, and ground black pepper, blending all flavors evenly.
  8. Optional broil: For a browned, bubbly top, transfer the queso to an oven-safe skillet and broil in the oven for 3-4 minutes until golden spots appear.
  9. Garnish and serve: Remove from heat, sprinkle with fresh cilantro, chopped tomatoes, and additional jalapeños if desired. Serve immediately with tortilla chips and enjoy!

Notes

  • Use freshly shredded mozzarella for better melting and texture compared to pre-shredded cheese.
  • Adjust the amount of jalapeños and red pepper flakes to control the spice level.
  • Stir constantly to prevent cheese from sticking or separating.
  • Nutmeg is optional but adds a subtle warmth and complexity to the dip.
  • If you prefer a thicker dip, add extra cheese gradually until the desired consistency is achieved.
  • This dip can be kept warm over low heat, but avoid overheating to prevent curdling.
