Crispy oven-roasted Voodoo Fries tossed in a flavorful blend of Cajun and garlic spices, topped with a rich homemade cheddar cheese sauce, and optionally garnished with Ranch dressing and fresh chives. Perfect for satisfying your crave for a spicy, cheesy snack or appetizer.

Ingredients

For the Fries

  • 3 tablespoons extra-virgin olive oil (divided)
  • 2 medium/large russet potatoes (about 1 ¼ pounds)
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon dill weed
  • ¼ teaspoon onion powder

For the Cheese Sauce

  • 2 tablespoons unsalted butter
  • 1 ½ tablespoons all-purpose flour
  • 1 cup milk (low fat or whole)
  • 1 cup freshly grated sharp cheddar cheese (4 ounces)

Optional Toppings

  • Ranch dressing
  • Chopped chives or green onions

Instructions

  1. Prepare the oven and baking sheet: Place a rack in the lower third of your oven and preheat to 450°F. Drizzle a large rimmed baking sheet with 1½ tablespoons of olive oil, brushing it to coat the pan evenly.
  2. Soak the potatoes: Scrub and peel the potatoes if preferred (skin on is fine). Cut into ¼-inch-wide sticks. Place in a large bowl and cover with very hot water, ensuring the potatoes are submerged by 1 inch. Let sit for 10 minutes. Drain and thoroughly dry the potatoes with a clean towel to remove moisture.
  3. Season the fries: Wipe out the bowl used for soaking and return the dry potatoes to it. Drizzle with the remaining 1½ tablespoons olive oil. Sprinkle with Cajun seasoning, garlic powder, dill weed, and onion powder. Toss to evenly coat the fries with oil and spices. Spread them into a single layer on the prepared baking sheet.
  4. Bake the fries: Roast the fries in the lower third of the oven for 15 to 20 minutes until golden underneath. Remove from the oven and gently loosen the fries with a spatula, then flip them over in large sections to ensure even browning. Spread them out again in a single layer and continue roasting for an additional 5 to 10 minutes until they reach your desired crispness (about 30 minutes total for crispier fries).
  5. Make the cheese sauce: While the fries bake, melt the butter in a wide saucepan over medium heat. Add the flour and whisk constantly for 1 full minute to form a roux. Slowly pour in the milk, stirring continuously to keep the sauce smooth. Bring to a gentle boil and stir for 1 minute to slightly thicken the mixture.
  6. Add cheese to the sauce: Gradually mix in the cheddar cheese a little at a time, stirring continuously to prevent clumps and ensure a creamy, smooth sauce.
  7. Serve and garnish: Transfer the roasted fries to a serving plate or serve directly from the baking sheet. Drizzle with the warm cheese sauce and Ranch dressing if using. Sprinkle chopped chives or green onions over the top for added freshness and a mild onion flavor. Enjoy immediately while hot and crispy.

Notes

  • For extra crispy fries, ensure potatoes are thoroughly dried before seasoning and baking.
  • You can leave the potato skins on for added texture and nutrients.
  • Adjust Cajun seasoning amount to control the spice level.
  • Use whole milk in the cheese sauce for a richer, creamier texture.
  • The fries taste best when served immediately while hot and fresh.
  • Ranch dressing and chives are optional but add a nice cool contrast to the spicy, cheesy fries.
