This viral date bark recipe is a delicious and nutritious treat combining sweet Medjool dates, creamy peanut butter, crunchy roasted peanuts, and rich dark chocolate. Easy to prepare and perfect for snacking or gifting, this no-bake dessert is packed with flavor and texture, topped with a sprinkle of sea salt for an extra touch of sophistication.

Ingredients

Dates and Peanut Butter

  • 24 Medjool dates, pitted
  • 1/2 cup creamy peanut butter
  • 1/4 cup roasted unsalted peanuts, chopped

Chocolate Topping

  • 8 ounces dark chocolate (70% cocoa or preferred), chopped
  • A pinch of sea salt (optional, for garnish)

Instructions

  1. Prepare the base: Line a baking sheet with parchment paper or a silicone mat to prevent sticking and make cleanup easy.
  2. Arrange the dates: Place the pitted Medjool dates on the lined baking sheet in a 4 by 6 grid with the open, pitted side facing up. Press down gently with damp hands or cover with parchment and press with the bottom of a glass to flatten slightly and create a compact base.
  3. Add peanut butter and peanuts: Spread the creamy peanut butter evenly over the arranged dates covering all. Then sprinkle the chopped roasted peanuts over the peanut butter layer for a crunchy texture.
  4. Melt the chocolate: Using either a microwave in 20-second bursts stirring between intervals or a double boiler on the stove, melt the dark chocolate until completely smooth and fluid.
  5. Top with chocolate and chill: Drizzle and spread the melted chocolate evenly over the peanut butter and peanut peanuts layer. Sprinkle a pinch of sea salt over the top for flavor contrast. Place the baking sheet in the refrigerator and chill for about 30 minutes or until the chocolate hardens completely.
  6. Break into pieces and serve: Once set, remove the bark from the fridge and break it into bite-sized pieces by hand or cut into even squares with a knife. Store in an airtight container in the refrigerator until ready to enjoy.

Notes

  • Use damp hands or parchment paper to prevent sticky dates from adhering to your press.
  • Choose dark chocolate with at least 70% cocoa for a rich flavor.
  • For a nut allergy-friendly version, substitute peanut butter and peanuts with your preferred seed butter and seeds.
  • Store the date bark in an airtight container in the refrigerator for up to one week.
  • Sprinkling sea salt enhances the chocolate's flavor but can be omitted if preferred.
