This luscious Pistachio Cream recipe offers a vibrant and silky smooth dessert cream perfect for spreading or using as a filling. Made from shelled pistachios, white chocolate, butter, and milk, this recipe transforms simple ingredients into a rich, nutty, and slightly sweet pistachio paste with a delicate texture and intense flavor, ideal for enhancing your favorite desserts.

Ingredients

Ingredients

  • 140 g shelled pistachios
  • 180 ml whole milk
  • 25 g salted butter
  • 100 g white chocolate
  • 1 tablespoon icing sugar (powdered sugar)

Instructions

  1. Boil the pistachios: Boil the shelled pistachios in water for 3 minutes to soften them. Drain well and spread them out on a clean kitchen towel to dry.
  2. Remove pistachio skins: Use the kitchen towel to rub the pistachios gently, loosening and removing the skins. Discard the skins and keep the skins-free pistachios. This step enhances the vibrant green color and reduces bitterness in the cream.
  3. Start blending the pistachios: Place the peeled pistachios into a food processor. Add the icing sugar and just a splash of the milk to help blend.
  4. Blend into pistachio paste: Blend the mixture for about 5 minutes, scraping down the sides every minute. Initially, the pistachios will resemble breadcrumbs, but patience will reward you with a smooth, creamy pistachio paste.
  5. Melt chocolate and butter: While blending, melt the butter, white chocolate, and remaining milk in a heatproof bowl set over gently simmering water. Stir occasionally and remove from heat once completely melted.
  6. Combine and blend until creamy: Transfer the pistachio paste to a blender, pour in the melted white chocolate mixture, and blend until the mixture is extra creamy and silky smooth.
  7. Serve or use as desired: Your pistachio cream is now ready to enjoy immediately or use as a filling or topping for your favorite desserts.

Notes

  • Removing the skins from pistachios is key to achieving a bright green color and smoother taste, but you can skip this step if short on time.
  • If using unshelled pistachios, allow extra time for shelling before starting.
  • Use whole milk for the creamiest texture; you may substitute with other milk types but texture and flavor will vary.
  • Store pistachio cream in an airtight container in the refrigerator for up to 3 days.
  • To loosen the pistachio skins easily, rub them between two kitchen towels rather than using water after boiling.
