These Vegetarian Bean and Cheese Enchiladas are a delicious and easy-to-make meal featuring warm flour tortillas filled with seasoned black beans and melted Monterey Jack cheese. Topped with fresh cilantro, scallions, and enchilada sauce, they're perfect for a comforting dinner any night of the week.

Ingredients

Enchiladas

  • 1 cup enchilada sauce
  • 7 to 8 flour tortillas, 6-8 inches, lightly warmed
  • 1.5 cups cooked black beans
  • 4 ounces Monterey Jack cheese, grated
  • 1/2 cup cilantro, finely chopped
  • 4 scallions, thinly sliced

Instructions

  1. Preheat Oven: Heat the oven to 425ºF to prepare for baking the enchiladas.
  2. Prepare Baking Dish: In a 10-inch baking dish, spread 1/2 cup of the enchilada sauce evenly across the bottom to prevent sticking and add flavor.
  3. Assemble Enchiladas: Place one tortilla on a work surface. Spread 2 to 3 tablespoons of black beans along the center of the tortilla. Sprinkle a light amount of grated Monterey Jack cheese over the beans. Fold the tortilla in half and then roll it into a coil shape. Place it seam side down in the baking dish over the sauce. Repeat this process with the remaining tortillas until the baking dish is filled.
  4. Add Toppings: Spread another 1/2 cup of enchilada sauce over the rolled tortillas. Sprinkle the chopped cilantro and sliced scallions evenly on top. Finish by sprinkling the remaining grated cheese over everything. Optionally, cover and refrigerate the dish for up to 24 hours if you want to bake it later.
  5. Bake: Transfer the uncovered baking dish to the oven and bake for 15 to 20 minutes or until the cheese starts to blister and melt beautifully.
  6. Serve: Let the enchiladas cool briefly after baking, then serve warm and enjoy.

Notes

  • Using warmed tortillas helps prevent them from cracking when rolling.
  • Cooked black beans can be homemade or canned, drained and rinsed if using canned.
  • A 10-inch baking dish works well, but any comparable size oven-safe dish can be used.
  • For extra flavor, feel free to add spices to the beans before assembling.
  • If refrigerating before baking, remove the cover before placing the dish in the oven to ensure cheese browns correctly.
