These Vegan Zucchini Brownies are a moist and fudgy treat made with pureed zucchini for added moisture and nutrition, combining rich cocoa and dairy-free chocolate chips for a deliciously guilt-free indulgence. Perfect for those seeking a plant-based dessert with a subtle veggie boost.

Ingredients

Wet Ingredients

  • 1 medium zucchini, puréed (225g or about 3/4 cup puréed)
  • 1 cup granulated sugar
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 6 tablespoons cocoa powder
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Add-ins

  • 2/3 cup vegan chocolate chips

Instructions

  1. Preheat the oven: Set your oven to 325 degrees Fahrenheit and line an 8×8-inch baking pan with parchment paper or grease it very thoroughly to prevent sticking.
  2. Puree the zucchini and blend wet ingredients: Roughly chop the zucchini and puree it in a blender until completely smooth. To the puree, add the sugar, melted coconut oil, and vanilla extract, blending again until the mixture is silky and fully combined.
  3. Add cocoa powder: Transfer the blended mixture into a mixing bowl and whisk in the cocoa powder until the batter is smooth and evenly dark.
  4. Mix dry ingredients: Add the all-purpose flour, baking soda, and salt to the wet mixture. Stir everything together gently until the batter is smooth and evenly combined, taking care not to overmix.
  5. Fold in chocolate chips: Carefully fold the vegan chocolate chips into the batter. For extra chocolatey brownies, sprinkle a few additional chips on top before baking.
  6. Prepare for baking: Pour the batter into the lined or greased baking pan and tap the pan on the counter a few times to release any trapped air bubbles and ensure an even surface.
  7. Bake: Place the pan in the preheated oven and bake for 20 to 23 minutes, or until the top is set and a toothpick inserted comes out mostly clean with a few moist crumbs.
  8. Cool and slice: Allow the brownies to cool completely in the pan before slicing to prevent sticking. For the cleanest slices, rinse your knife under warm water between cuts.

Notes

  • Ensure to let the brownies cool completely before slicing to avoid a sticky mess.
  • Rinsing your knife in warm water between cuts yields neater brownies.
  • Using fresh zucchini is best for moisture and flavor.
  • You can substitute coconut oil with another neutral oil if preferred.
  • These brownies keep well stored in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
