A flavorful and quick Uncle Roger style egg fried rice recipe featuring chicken flavored rice, aromatic garlic and shallots, eggs, and a perfect balance of soy sauce, sesame oil, and MSG for an authentic taste.

Ingredients

Rice and Eggs

  • 4 cups chicken flavored rice, cooked
  • 1 egg
  • 1 egg yolk

Vegetables and Aromatics

  • 5 garlic cloves, smashed
  • 1 shallot, sliced from the middle
  • 1 spring onion, sliced
  • 1 red chili, sliced or chopped

Oils and Seasonings

  • 2 tbsp peanut oil
  • About 2 tbsp soy sauce
  • About 2 tbsp sesame oil
  • About 1/2 tbsp MSG

Instructions

  1. Cook the Rice: Prepare the chicken flavored rice according to the package instructions to ensure it is fully cooked and fluffy.
  2. Whisk Eggs: In a bowl, whisk together the egg and egg yolk until well combined and set aside.
  3. Heat Wok and Oil: Coat a wok pan with the peanut oil and heat over medium heat. Once the oil starts smoking, discard any excess oil to avoid greasiness.
  4. Sauté Aromatics: Add the smashed garlic and sliced shallot to the wok and fry for about 3 minutes until fragrant and slightly golden.
  5. Cook Egg: Pour the whisked eggs into the wok and stir continuously until the eggs are almost solid but still moist.
  6. Add Rice: Add the cooked chicken flavored rice to the wok and mix everything thoroughly to combine the eggs with the rice.
  7. Add Sauces: Pour in the soy sauce and sesame oil, then flatten and press the rice with the back of the spoon to allow the flavors to infuse deeply.
  8. Final Seasoning: Sprinkle the MSG, sliced spring onion, and chopped red chili into the wok and mix everything well to finish the dish.

Notes

  • Cooking the rice in advance and cooling it helps achieve better texture for fried rice.
  • Adjust soy sauce and sesame oil amounts to taste preferences for saltiness and aroma.
  • MSG is optional but adds the authentic umami flavor associated with this recipe.
  • Use a well-seasoned wok or a large non-stick skillet for best results.
  • The red chili can be omitted or adjusted depending on spice tolerance.
