Ube Mochi Pancakes are a delightful fusion of traditional Filipino flavors and classic breakfast favorites. These thick, chewy pancakes incorporate ube halaya and ube extract, giving them a vibrant purple hue and a subtly sweet, earthy taste. Made with sweet rice flour and coconut milk, they boast a unique mochi-like texture that's both satisfying and indulgent. Perfect for a brunch treat topped with fresh fruit and maple syrup, these pancakes offer a fun twist on the ordinary.

Ingredients

Wet Ingredients

  • 2 eggs
  • 1 ½ cup full-fat coconut milk
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • ½ tsp ube extract
  • ¼ cup ube halaya

Dry Ingredients

  • ¼ cup light brown sugar
  • 1 ¾ cup sweet rice flour
  • 2 tsp baking powder
  • ¼ tsp salt

Instructions

  1. Mix Ingredients: Combine all the wet and dry ingredients in a large bowl. Whisk thoroughly until you achieve a uniform, thick batter with a vibrant purple color.
  2. Preheat the Pan: Heat a nonstick pan over medium-low heat and melt a small amount of butter to grease the surface.
  3. Form Pancakes: Using a ⅓ cup measuring spoon or a soup ladle, pour the batter into the center of the pan. Gently move the pan in a circular motion to shape perfect round pancakes.
  4. Cook First Side: Let the pancake cook for 1-2 minutes until small bubbles start to appear on the surface.
  5. Flip and Cook Other Side: Carefully flip the pancake and cook for an additional 1-2 minutes until cooked through and lightly golden.
  6. Repeat Cooking: Transfer the cooked pancake to a plate and continue the process with the remaining batter. You should end up with about 8 pancakes.
  7. Serve: Top the pancakes with fresh fruit and a drizzle of maple syrup for a delicious finish.

Notes

  • For best results, use a nonstick pan and melt butter to prevent sticking.
  • Adjust the heat to medium-low to avoid burning the pancakes before they cook through.
  • You can substitute ube extract with purple yam powder if ube extract is unavailable.
  • These pancakes have a chewy texture thanks to the sweet rice flour, offering a mochi-like bite.
  • Serve immediately for the best texture, though leftovers can be reheated gently in a pan.
