Ingredients

Soup Base

  • 2 teaspoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound Italian sausage
  • 1 (28 ounce) can crushed tomatoes, undrained
  • 2 (14.5 ounce) cans Italian style stewed tomatoes, undrained
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning

Pasta and Greens

  • 2 (9 ounce) packages refrigerated cheese tortellini (about 5 cups)
  • 3 cups fresh baby spinach

Seasoning

  • 3 teaspoons kosher salt
  • ½ teaspoon ground pepper

Instructions

  1. Sauté Aromatics: In a large pot over medium heat, heat the olive oil. Add the diced onion and minced garlic, sautéing for about 5 minutes or until they become tender and fragrant.
  2. Cook Sausage: Add the Italian sausage to the pot and cook, breaking it up with a spoon, until browned and cooked through, approximately 5 minutes.
  3. Add Tomatoes and Broth: Stir in the crushed tomatoes, Italian style stewed tomatoes, chicken broth, and Italian seasoning. Mix well to combine all the flavors.
  4. Cook Tortellini: Bring the soup to a boil, then add the cheese tortellini. Reduce the heat to medium-low and let it simmer until the tortellini is cooked through, about 5 to 8 minutes.
  5. Add Spinach and Season: Stir in the fresh baby spinach, kosher salt, and ground pepper. Cook for an additional 3 minutes or until the spinach is slightly wilted.
  6. Serve: Ladle the soup into bowls and serve warm. Optionally, accompany with shredded Parmesan cheese and crusty bread for a complete meal. Enjoy!

Notes

  • You can substitute Italian sausage with ground turkey or chicken for a leaner version.
  • Fresh tortellini cooks faster than frozen; adjust cooking time accordingly.
  • Adding a splash of red wine before simmering enhances the depth of flavor.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to a month.
