Ingredients

Caramel Sauce

  • 2 cups (414g) granulated sugar
  • 1 cup (240ml) water
  • 1/2 cup (112g) unsalted butter
  • 1 cup (240ml) heavy whipping cream
  • 1 tbsp vanilla extract
  • 1 tsp salt, plus additional to taste

Cake Layers

  • 2 cups (260g) all-purpose flour
  • 2 cups (414g) granulated sugar
  • 3/4 cup (85g) natural unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) milk
  • 1 cup (240ml) vegetable oil
  • 1 1/2 tsp vanilla extract
  • 1 cup (240ml) hot water

Caramel Buttercream Frosting

  • 2 1/2 cups (560g) unsalted butter, room temperature
  • 10 cups (1150g) powdered sugar
  • 1/2 to 3/4 cup caramel sauce (from above)
  • Salt, to taste

Chocolate Ganache and Decoration

  • 6 oz (1 cup | 169g) semi-sweet chocolate chips
  • 1/2 cup (120ml) heavy whipping cream
  • 1/2 cup chopped pecans, toasted
  • Additional caramel sauce and chopped pecans for garnish

Instructions

  1. Make the Caramel Sauce: In a medium to large saucepan, combine granulated sugar and water over medium-low heat. Cook until sugar dissolves completely, about 3-5 minutes. Add butter and allow it to melt fully while stirring occasionally.
  2. Cook the Caramel: Increase heat to medium and bring the mixture to a rolling boil. Avoid whisking to prevent crystallization; instead, occasionally tilt the pan to cook evenly. Boil until the caramel turns a deep golden copper color, about 15-20 minutes.
  3. Add Cream to Caramel: Remove pan from heat and slowly pour in heavy whipping cream in a steady stream while whisking quickly. The mixture will bubble vigorously. Whisk until fully combined.
  4. Finish Caramel Sauce: Stir in vanilla extract and 1/2 teaspoon salt. Adjust salt to taste. Refrigerate the caramel sauce to cool and thicken while preparing other components.
  5. Prepare Cake Pans and Preheat Oven: Line three 8-inch cake pans with parchment paper and grease the sides. Preheat oven to 300°F (148°C).
  6. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  7. Add Wet Ingredients: Add eggs, milk, and vegetable oil to dry mixture and mix well. Stir in boiling water and vanilla extract until batter is smooth.
  8. Bake the Cake Layers: Divide batter evenly among prepared pans. Bake for 30-33 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  9. Cool the Cakes: Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  10. Make Caramel Buttercream: Beat unsalted butter in a large mixing bowl until smooth. Gradually add half the powdered sugar and beat until combined. Mix in about 1/2 cup caramel sauce until smooth. Add remaining powdered sugar and blend well. Adjust caramel sauce quantity to achieve desired consistency. Season with salt to taste.
  11. Level and Stack Cakes: Trim domes off cakes with a serrated knife. Place first layer on cake plate, spread about 2/3 cup frosting evenly. Pipe a frosting dam around edge to hold caramel sauce.
  12. Add Caramel and Pecans: Pour about 1/2 cup caramel sauce inside dam, spread evenly. Sprinkle 1/4 cup chopped toasted pecans over caramel. Ensure frosting dam is even.
  13. Repeat Layers: Add second cake layer and repeat frosting, caramel, and pecan layer. Top with third cake layer and apply a thin crumb coat of frosting around the entire cake.
  14. Chill Cake: Refrigerate for 30 to 60 minutes to set the crumb coat and stabilize the layers.
  15. Frost Cake: Apply remaining caramel buttercream evenly on the outside of the cake.
  16. Make Chocolate Ganache: Place chocolate chips in a medium bowl. Heat heavy cream until it just begins to boil. Pour over chocolate chips and let sit for 2-3 minutes, then whisk until smooth.
  17. Decorate with Ganache: Drizzle ganache around edges of cake and pour the remaining on top, spreading evenly. Allow to firm slightly.
  18. Finish Decoration: Pipe remaining frosting around the top edge. Drizzle additional caramel sauce and sprinkle chopped pecans to finish.
  19. Chill and Serve: Refrigerate the cake until ready to serve. Serve chilled or at room temperature. Best eaten within 3-4 days, stored covered in the refrigerator.

Notes

  • Be careful while making caramel sauce as the mixture will be extremely hot and bubbles vigorously when cream is added.
  • Do not whisk caramel while it boils to prevent sugar crystallization; tilting the pan gently helps cook evenly.
  • Cooling the cake layers completely before frosting ensures smooth coating and prevents melting.
  • Refrigerate cake after crumb coat to firm layers for easier frosting application.
  • To toast pecans, spread evenly on a baking sheet and bake in a 350°F oven for 5-7 minutes until fragrant, stirring once.
  • Chocolate ganache can be made ahead and reheated gently before using.
  • Use room temperature ingredients for frostings to achieve smooth texture.
