A comforting and easy Turkey Stuffing Casserole that combines leftover turkey, flavorful stuffing, vegetables, and creamy soup, baked to bubbly perfection. Perfect for using up leftovers and serving a hearty meal to the family in under an hour.

Ingredients

Stuffing Mix

  • 6 Tablespoons butter (melted)
  • 1 1/2 cups chicken broth
  • 1 box stove top stuffing mix

Main Casserole

  • 3 cups cubed leftover turkey
  • 1 10 ounce package of frozen vegetables
  • 2 celery stalks (sliced thinly)
  • 1 teaspoon minced garlic
  • 10 ounce can condensed cream of chicken soup

To Serve

  • 2 cups gravy
  • 1 Tablespoon parsley

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and spray a 9x13-inch baking dish with non-stick spray to prevent sticking.
  2. Heat Broth and Butter: In a pot, heat the chicken broth and melted butter until it reaches a boiling point, ensuring the stuffing will absorb flavorful liquid.
  3. Make Stuffing: Remove the pot from heat, stir in the dry stuffing mix gently, and cover with a lid. Let it sit undisturbed for 5 minutes to absorb the liquid, then fluff with a fork to separate the crumbs.
  4. Combine Casserole Ingredients: In a large mixing bowl, combine the cubed leftover turkey, frozen vegetables, thinly sliced celery, minced garlic, and condensed cream of chicken soup. Mix well to evenly distribute all ingredients.
  5. Assemble Casserole: Pour the turkey-vegetable mixture into the prepared baking dish and smooth it into an even layer. Carefully cover this layer with the prepared stuffing.
  6. Bake: Place the casserole in the preheated oven and bake for 30 to 35 minutes until the top is bubbly and lightly golden.
  7. Garnish and Serve: Remove from the oven, sprinkle fresh parsley over the top, then cut into portions. Serve hot with gravy on the side for added moisture and flavor.

Notes

  • For a vegetarian version, substitute turkey with a plant-based protein and use vegetable broth and mushroom soup instead of chicken products.
  • If using fresh vegetables instead of frozen, sauté them briefly before mixing to reduce excess moisture.
  • Leftover casserole can be stored in the refrigerator for 3-4 days and reheated in the oven or microwave.
  • Adjust the amount of broth if you prefer a moister or drier stuffing layer.
  • Adding a sprinkle of cheese on top before baking can add richness and a golden crust.
