This Turkey Avocado Egg Wrap is a quick and nutritious breakfast option that combines fluffy eggs, creamy avocado, savory turkey, and fresh spinach all wrapped up for an easy meal on the go. Ready in just 10 minutes, it’s perfect for anyone looking for a high-protein, low-carb start to the day.

Ingredients

Egg Wrap Base

  • 1/2 tsp cornstarch
  • 1 tsp water
  • 2 large eggs
  • 2 pinches salt and pepper
  • 1/2 Tbsp coconut oil or butter
  • 1/3 cup finely shredded swiss cheese

Filling

  • 4 thin slices deli turkey
  • 1 small tomato, thinly sliced
  • 1/2 avocado, thinly sliced
  • 1/2 cup spinach

Instructions

  1. Prepare Egg Mixture: In a mixing bowl, whisk together the cornstarch and water until smooth. Add the eggs along with salt and pepper, then whisk thoroughly until well combined and slightly frothy.
  2. Heat Skillet: Place a 12-inch non-stick skillet over medium heat and allow it to warm up for 1 to 2 minutes. Add the coconut oil or butter and swirl it around to coat the bottom of the pan evenly.
  3. Cook Egg Wrap: Pour the egg mixture into the hot skillet, immediately lifting and tilting the pan in a circular motion to spread the eggs evenly, similar to making a crepe. Cook for about 2 to 3 minutes, gently lifting, tilting, and swirling the pan as needed so the egg layer is uniform. The bottom should be set while the top remains just slightly wet but mostly set.
  4. Flip and Add Cheese: Loosen the edges of the egg wrap using a flat spatula, then carefully slide the spatula underneath and flip the wrap to cook the other side. Immediately sprinkle the swiss cheese evenly over the surface and cook for about 1 more minute until the top is set and cheese is melted.
  5. Assemble Wrap: Remove the egg wrap from heat. Layer the deli turkey slices, thin tomato slices, avocado slices, and spinach evenly over the cheese-covered egg wrap.
  6. Roll and Serve: Roll up the wrap tightly, cut in half if desired, and serve immediately while warm for the best flavor and texture.

Notes

  • Using cornstarch in the egg mixture helps create a tender, slightly thicker egg wrap.
  • Feel free to substitute the swiss cheese with cheddar or mozzarella if preferred.
  • For a different protein option, swap turkey for chicken breast or ham slices.
  • Make sure the pan is properly heated to prevent sticking and to cook the eggs evenly.
  • This wrap is best enjoyed fresh but can be wrapped tightly and refrigerated for up to 24 hours.
