Delicious and hearty Trail Mix Pancakes made with a fluffy batter combined with crunchy trail mix for added texture and flavor. These pancakes are perfect for a weekend breakfast or brunch, served warm with butter and maple syrup.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon sea salt

Wet Ingredients

  • 2 cups whole milk
  • 2 large eggs, beaten
  • 4 tablespoons salted butter, plus more for serving

Additional

  • 1½ cups trail mix
  • Maple syrup, for serving

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, sugar, baking powder, and sea salt to create the dry base for your pancake batter.
  2. Add Wet Ingredients: Whisk the whole milk and beaten eggs into the dry mixture until everything is just incorporated. Be careful not to overmix to keep the batter light and fluffy.
  3. Prepare Skillet: Add 1 tablespoon of salted butter to a large skillet and heat over medium heat until the butter is melted and bubbling.
  4. Cook Pancakes: Pour ⅓ cup portions of the batter into the skillet, working in batches. Immediately sprinkle each pancake with a heaping tablespoon of trail mix. Cook until bubbles form on the surface, about 1-2 minutes.
  5. Flip and Finish Cooking: Use a spatula to flip each pancake and cook until the underside is golden brown, another 1-2 minutes. Transfer cooked pancakes to a plate.
  6. Repeat: Repeat the process with the remaining butter, batter, and trail mix until all pancakes are cooked.
  7. Serve: Serve the pancakes warm with additional butter and a drizzle of maple syrup for a sweet finish.

Notes

  • Do not overmix the batter to ensure the pancakes remain fluffy.
  • Use a non-stick skillet or well-seasoned pan for best results.
  • Customize your trail mix to include your favorite nuts, seeds, and dried fruits.
  • For a dairy-free option, substitute milk with almond or oat milk and use dairy-free butter.
  • These pancakes are best served immediately but can be kept warm in a low oven (200°F) while cooking remaining batter.
