Ingredients

Crust

  • 31 graham cracker sheets (about 3½ sleeves)
  • ¼ cup granulated sugar
  • 1 tbsp brown sugar (optional, but recommended)
  • ¾ cup + 1 tbsp butter, melted
  • ¼ tsp salt (omit if using salted butter)

Fruit Compote

  • 2½ cups fresh or frozen fruit (triple berry recommended)
  • ½ cup granulated sugar
  • ½ large lemon, juiced

Cheesecake Filling

  • 24 oz cream cheese, full-fat, room temperature
  • 8 oz mascarpone cheese, room temperature
  • 1 cup powdered sugar, sifted
  • ¼ cup sour cream, room temperature
  • 3 tsp vanilla bean paste
  • 1½ cups heavy whipping cream, room temperature

Instructions

  1. Prepare the Crust: Crush the graham crackers in a food processor until you achieve a fine gravel-like texture with a few small pebbles remaining. Melt the butter either in the microwave or on the stovetop. In a large mixing bowl, combine the graham cracker crumbs, granulated sugar, brown sugar, melted butter, and salt. Mix well and test by squeezing some crumbs in your hand; it should hold together like wet sand. Adjust by adding more melted butter if needed. Press the mixture firmly and evenly into a springform pan, ensuring the crust walls reach the top of the pan rim. Chill in the refrigerator while preparing the other components.
  2. Make the Fruit Compote: In a medium saucepan over medium heat, combine the fruit, granulated sugar, and lemon juice. Stir frequently as the mixture thickens and resembles a jammy consistency coating the back of a spoon. This process takes about 15 to 30 minutes depending on the fruit and heat. Once thickened, remove from heat and allow to cool completely. To speed cooling, you can place the saucepan in the refrigerator.
  3. Prepare the Cheesecake Filling: Using a stand or handheld mixer on low speed, beat the room temperature cream cheese, mascarpone cheese, sifted powdered sugar, and sour cream until smooth and combined. Add vanilla bean paste and mix again. Gradually pour in the heavy whipping cream while continuing to whip on low speed until the filling holds its shape and looks like a thick, spreadable bagel cream cheese.
  4. Assemble the Cheesecake: Spread about two-thirds of the cheesecake filling evenly over the chilled crust in the springform pan. Create a well or crater in the center by scooping out filling and pushing some upward against the crust walls, minimizing crumb disturbance. Pour the cooled fruit compote into this center well. Next, scoop the remaining cheesecake filling on top, spreading evenly to fully cover and encase the fruit. The filling surface should be close to the crust's rim.
  5. Chill and Serve: Refrigerate the assembled cheesecake for at least 4 hours, preferably overnight, to set. When ready to serve, place a large, round plate upside down over the springform pan. Quickly invert the pan and plate together, then release the springform side and gently remove the pan bottom. Lightly tap the crust with a serving spoon to help it release and enjoy your upside-down cheesecake!

Notes

  • For the best texture, use full-fat cream cheese and mascarpone at room temperature.
  • If the graham cracker crumbs feel too dry, add melted butter gradually until the right consistency is reached.
  • Choose frozen fruit for convenience or fresh for a fresher taste in the compote.
  • Chilling overnight improves texture and flavor melding.
  • Vanilla bean paste enhances the filling with rich vanilla flavor over extract.
  • This cheesecake is best served chilled and consumed within 3 days.
