A rich and indulgent chocolate mousse made with 60% dark chocolate, creamy egg yolks, and whipped cream for a light yet decadent dessert. This classic recipe combines tempered cream and chocolate for a smooth texture, enhanced with a hint of espresso powder and vanilla, perfect for serving chilled with a delicate whipped cream topping and optional chocolate shavings.

Ingredients

Chocolate Mousse

  • 14 ounces 60% dark chocolate, finely chopped
  • 8 large egg yolks
  • 1/2 cup (99g) granulated sugar
  • 4 cups (908ml) heavy cream, divided (2 1/2 cups and 1 1/2 cups)
  • 1 tablespoon vanilla extract
  • 2 teaspoons espresso powder (optional)
  • 1/2 teaspoon salt

Whipped Cream Topping

  • 1 1/2 cups (340ml) heavy cream
  • 1/2 cup (57g) confectioners' sugar
  • Chocolate shavings (for garnish, optional)

Instructions

  1. Prepare the chocolate: Place the finely chopped dark chocolate in a large heatproof bowl and set aside for melting later.
  2. Beat egg yolks and sugar: Using a handheld electric mixer on medium-high speed, beat the egg yolks and granulated sugar in a large bowl until the mixture is thick, smooth, and a deep yellow color, then set aside.
  3. Heat cream: In a medium saucepan over medium heat, warm 2 1/2 cups (567ml) of heavy cream until it just begins to simmer. Remove from heat.
  4. Temper egg mixture: Slowly whisk half of the hot cream into the egg yolk and sugar mixture, adding gradually and constantly whisking to temper the eggs and prevent curdling. Leave the remaining cream in the saucepan.
  5. Cook the mixture: Transfer the tempered egg and cream mixture back into the saucepan with the remaining cream, then cook over medium heat, stirring constantly until it thickens enough to coat the back of a spoon, about 5 minutes. Do not let it boil.
  6. Melt chocolate: Pour the warm custard mixture over the chopped chocolate. Stir continuously until the chocolate melts completely and the mixture is smooth.
  7. Add flavorings and chill: Whisk in the vanilla extract, espresso powder (if using), and salt. Cover the bowl tightly with plastic wrap and refrigerate until the mixture is cold and set, about 1 to 2 hours.
  8. Whip remaining cream: While the chocolate mixture chills, beat the remaining 1 1/2 cups (340ml) of heavy cream with an electric mixer until stiff peaks form.
  9. Fold whipped cream into chocolate: Gently fold the whipped cream into the chilled chocolate mixture, mixing softly but thoroughly until fully combined and smooth.
  10. Assemble mousse: Spoon the mousse into dessert cups, reserving room for the whipped cream topping.
  11. Make whipped cream topping: In a large bowl or stand mixer with the whisk attachment, beat 1 1/2 cups (340ml) heavy cream with 1/2 cup (57g) confectioners’ sugar until medium-stiff peaks form, silky and smooth yet firm enough to hold shape.
  12. Top and garnish: Spoon the whipped cream topping over the mousse, garnish with chocolate shavings if desired, and serve immediately.

Notes

  • Tempering the egg yolks with warm cream prevents curdling and ensures a smooth custard base.
  • The espresso powder is optional but enhances the depth of chocolate flavor.
  • Chilling the chocolate mixture before folding in whipped cream is crucial for maintaining the mousse’s light and airy texture.
  • Use high-quality dark chocolate with at least 60% cocoa for best flavor and richness.
  • This mousse is best served fresh but can be refrigerated for up to 24 hours.
  • For a dairy-free variation, substitute coconut cream and dairy-free chocolate, but texture and taste will vary.
