A hearty and delicious Tater Tot Breakfast Casserole combining crispy tater tots, savory beef, and a rich blend of cheeses baked with eggs and creamy sour cream, perfect for a satisfying morning meal.

Ingredients

Main Ingredients

  • 1 30-32 Ounce Bag Frozen Tater Tots
  • 16 Ounces Ground Beef (see note on meat)
  • 1 1/2 Cups Shredded Cheddar Cheese
  • 1 Cup Shredded Mozzarella or Monterrey Jack Cheese

Egg Mixture

  • 8 Large Eggs
  • 1/2 Cup Milk
  • 1 Cup Sour Cream
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Onion Powder
  • 1-2 Teaspoons Hot Sauce (Optional)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat the oven to 375 degrees Fahrenheit. Spray a 9x13 inch baking dish with non-stick cooking spray to prevent sticking.
  2. Combine Base Ingredients: Place the frozen tater tots, ground beef, 1 cup of shredded cheddar cheese, and 1 cup of shredded mozzarella into the baking dish. Use your hands to toss and combine all these ingredients evenly.
  3. Whisk Egg Mixture: In a large bowl, thoroughly whisk together the eggs, milk, sour cream, salt, pepper, garlic powder, onion powder, and optional hot sauce until smooth and fully incorporated.
  4. Pour Egg Mixture Over Base: Pour the prepared egg mixture evenly over the tater tot and beef mixture in the baking dish, ensuring it covers all ingredients.
  5. Bake the Casserole: Place the dish in the preheated oven and bake for 45 minutes until the casserole is golden brown and cooked through. Remove from oven and sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  6. Final Melt: Return the dish to the oven for an additional 5 minutes, or until the cheese on top is fully melted and bubbly. Remove and let cool slightly before serving.

Notes

  • For the beef, ground beef is recommended, but you can also substitute with ground turkey or sausage for a different flavor.
  • Hot sauce is optional and can be adjusted to taste or omitted entirely for a milder dish.
  • Ensure the baking dish is well greased to prevent sticking.
  • Let the casserole rest for a few minutes after baking to set and make serving easier.
  • This casserole can be prepared ahead of time and refrigerated before baking.
