Sweet Potato Toast is a healthy and versatile breakfast or snack option made by thinly slicing sweet potatoes and toasting them until tender. These toasts serve as a gluten-free, nutrient-dense base for a variety of flavorful and nutritious toppings, from creamy cheeses with fresh fruit to savory avocado and eggs, offering both sweet and savory choices to suit any palate.

Ingredients

Sweet Potato Toast Base

  • 1 large wide sweet potato
  • Cooking spray
  • Salt, to taste

Toppings

  • Cream cheese topped with blueberries and chia seeds
  • Ricotta cheese topped with raspberries and shredded coconut
  • Peanut butter topped with banana slices and cinnamon
  • Cottage cheese topped with tomatoes and everything seasoning
  • Fried egg topped with fresh chopped parsley, salt, and black pepper
  • Mashed avocado mixed with lime juice, salt, and pepper

Instructions

  1. Prepare Sweet Potato: Using a large sharp knife, cut off the bottom stem of the sweet potato and place it on a cutting board with the cut side down. Keep the skin on to hold the slices together.
  2. Slice the Sweet Potato: Carefully slice the sweet potato lengthwise into about 6 thin slices, each approximately 1/4 to 1/3 inch thick, to create manageable toast-sized pieces.
  3. Season: Lightly spray both sides of the sweet potato slices with cooking spray, then sprinkle them with salt to taste for enhanced flavor.
  4. Toasting in Toaster: Insert the sweet potato slices into a standard toaster on the high setting. Toast until the slices are fork tender, which may require multiple cycles. Adjust toaster setting to medium if browning occurs too quickly.
  5. Alternative Oven Method: Preheat the oven to 350°F (175°C). Place a wire rack on a rimmed baking sheet and arrange sweet potato slices in a single layer on the rack. Bake for 15-20 minutes until tender but not fully softened.
  6. Cool: Once toasted or baked, transfer the sweet potato slices to a wire rack to cool slightly. This helps maintain crispness and prevents sogginess under toppings.
  7. Add Toppings: Top the sweet potato toasts with your choice of toppings: cream cheese with blueberries and chia seeds; ricotta with raspberries and coconut; peanut butter with banana and cinnamon; cottage cheese with tomatoes and everything seasoning; fried egg with parsley, salt, and pepper; or mashed avocado with lime juice and seasoning.

Notes

  • Use a wide sweet potato for easier slicing and more stable toast pieces.
  • Keep the skin on the sweet potato slices to help hold the toast together during cooking.
  • Cooking times may vary depending on the toaster or oven – check for fork tenderness before removing.
  • Try toasting multiple times if the slices are not tender enough after the first cycle in the toaster.
  • The toppings are just suggestions – feel free to customize with your favorite spreads and fruits or vegetables.
  • Sweet potato toast is naturally gluten-free and can be enjoyed by those avoiding gluten-containing breads.
