Ingredients

Vegetables and Aromatics

  • 1 tbsp Olive oil
  • 1 medium Onion, diced
  • 2 medium Bell peppers, diced
  • 8 cloves Garlic, minced
  • 1 1/2 lb Sweet potatoes, peeled and cut into 1/2-inch cubes

Spices and Seasonings

  • 2 tbsp Chili powder
  • 2 tbsp Cumin
  • 1 tbsp Dried oregano
  • 1/2 tbsp Sea salt

Beans and Tomatoes

  • 2 15-oz cans Black beans, drained and rinsed
  • 2 15-oz cans Petite diced tomatoes, with liquid
  • 1 10-oz can Diced tomatoes with green chiles, with liquid

Liquids

  • 1 cup Vegetable broth

Instructions

  1. Prepare aromatics: Heat the olive oil in a Dutch oven over medium heat. Add the diced onions and bell peppers. Sauté for about 10 minutes, stirring occasionally, until they start to brown and become fragrant, creating a flavorful base for the chili.
  2. Add spices and garlic: Stir in the minced garlic, chili powder, cumin, and dried oregano. Continue to sauté for 1 minute, allowing the spices to bloom and the garlic to release its aroma, enhancing the overall flavor of the chili.
  3. Combine main ingredients and simmer: Add the cubed sweet potatoes, black beans, both kinds of diced tomatoes (including the ones with green chiles), vegetable broth, and sea salt to the pot. Bring the mixture to a boil, then reduce the heat to low. Cover the Dutch oven and let it simmer gently for about 30 minutes, or until the sweet potatoes are tender and the chili has thickened to your desired consistency.
  4. Final seasoning adjustments: Taste the chili and adjust the seasoning by adding more salt or freshly ground black pepper if needed. Stir well and serve hot for a delicious and comforting meal.
