This refreshing Strawberry Mojito recipe combines fresh strawberries, mint leaves, lime juice, and white rum to create a delightful twist on the classic mojito cocktail. Perfect for a warm day, it's lightly sweetened with simple syrup and topped with club soda for a bubbly finish.

Ingredients

Strawberry Mojito

  • ¼ cup white rum (2 oz)
  • 2 tbsp fresh lime juice (1 oz)
  • 2 tbsp simple syrup, plus more to taste (1 oz)
  • 4 ripe strawberries, hulled
  • 8 fresh mint leaves
  • 1 cup club soda (to top)
  • Ice
  • Fresh mint and sliced strawberries (for garnish)

Instructions

  1. Muddle ingredients: Add the strawberries, mint leaves, and simple syrup to a sturdy glass, jar, or cocktail shaker. Gently muddle just until the strawberries release their juice and the mint becomes fragrant. Avoid over-muddling the mint to prevent bitterness.
  2. Add liquids and ice: Pour in the white rum and fresh lime juice, then add a handful of ice to the mixture.
  3. Mix the drink: Shake briefly until chilled for a well-mixed mojito, or stir well if you prefer a slightly less diluted cocktail.
  4. Adjust flavor: Taste the mixture after adding the rum and before pouring over ice. Adjust sweetness by adding more simple syrup or tartness with additional lime juice as desired.
  5. Serve: Strain the mixture into a tall glass filled with fresh ice for a clear presentation, or pour everything in for a rustic-style drink.
  6. Top and garnish: Top the drink with club soda to add effervescence, stir gently, then garnish with fresh mint sprigs and a sliced strawberry. Serve immediately.

Notes

  • Use ripe, sweet strawberries for the best natural flavor.
  • Do not over-muddle the mint to avoid a bitter taste.
  • Adjust the simple syrup based on your preferred sweetness.
  • This recipe serves one but can be easily scaled for multiple servings.
  • For a non-alcoholic version, omit the rum and add extra club soda or a splash of lemon-lime soda.
