This easy no-bake strawberry cheesecake is a creamy, luscious dessert perfect for warm days or any occasion. Made with a crunchy digestive biscuit base and a rich cream cheese and double cream topping, it's studded with fresh strawberries for a burst of fruity flavor. Ready in under 30 minutes plus chilling time, this recipe is simple yet impressive.

Ingredients

Base:

  • 200 g Digestive biscuits (Crushed)
  • 80 g Unsalted butter (Melted)

Topping:

  • 300 ml Double cream
  • 400 g Full fat cream cheese
  • 100 g Icing sugar (Sifted)
  • 400 g Strawberries (Finely chopped and drained)
  • 200 g Strawberries (Leave some whole and halve the rest for garnish)

Instructions

  1. Prepare the base: Combine the crushed digestive biscuits with the melted unsalted butter and press the mixture firmly into the base of a springform tin or suitable dish. Chill in the fridge to set while preparing the topping.
  2. Drain chopped strawberries: Finely chop 400 g of strawberries and place them in a sieve to let the excess juice drain away. Discard the juice and set the strawberries aside for later use.
  3. Whip cream mixture: Pour the double cream into a large mixing bowl, add the full fat cream cheese and sifted icing sugar. Whisk vigorously using an electric whisk until the mixture becomes very thick, almost like ice cream in consistency.
  4. Incorporate strawberries: Gently fold the drained chopped strawberries into the thickened cream cheese mixture, ensuring even distribution without deflating the mixture.
  5. Assemble cheesecake: Remove the biscuit base from the fridge and pour the prepared cheesecake topping over it. Smooth the top evenly with a spatula.
  6. Chill thoroughly: Place the assembled cheesecake in the fridge and chill for at least 4 hours, preferably overnight, to allow it to fully set.
  7. Garnish and serve: Once set, carefully remove the cheesecake from the tin and top with the reserved whole and halved strawberries before serving.

Notes

  • Using full fat cream cheese is important for rich flavor and proper setting.
  • Draining the chopped strawberries prevents the topping from becoming too watery.
  • Chilling time is essential for the cheesecake to properly set and develop flavors.
  • For best results, use fresh, ripe strawberries.
  • This recipe does not require baking, making it ideal for hot weather or quick preparation.
