This Sticky Pecan Monkey Bread is a sweet, gooey pull-apart treat made with frozen dinner rolls, chopped pecans, brown sugar, and butterscotch pudding mix. Left to rise overnight and baked until golden and sticky, it's perfect for breakfast, brunch, or a delightful snack that melts in your mouth.

Ingredients

Nut and Roll Base

  • 1 cup (113g) chopped pecans
  • 24 unbaked frozen dinner rolls (Rhodes brand recommended)

Sweet Sticky Sauce

  • 1 cup (213g) light or dark brown sugar
  • 1 (3.5 ounces) box Cook ‘n Serve Butterscotch Pudding Mix (NOT instant)
  • ½ cup (113g) unsalted butter (1 stick), melted

Instructions

  1. Prepare the Pan: Spray a 10-inch Bundt pan thoroughly with nonstick cooking spray to ensure the monkey bread can be easily removed after baking.
  2. Layer Pecans and Rolls: Evenly sprinkle the chopped pecans into the bottom of the prepared Bundt pan. Arrange the frozen dinner rolls over the pecans in a single layer.
  3. Add Brown Sugar and Pudding Mix: Sprinkle the brown sugar evenly over the frozen rolls, followed by an even sprinkling of the dry butterscotch pudding mix over the brown sugar layer.
  4. Drizzle Melted Butter: Pour the melted unsalted butter evenly over the entire mixture, making sure to cover all the rolls and sugar for that sticky coating.
  5. Let It Rise Overnight: Cover the Bundt pan with a kitchen towel and leave it at room temperature overnight (about 8 hours) to let the rolls rise and absorb the flavors.
  6. Preheat Oven: When ready to bake, preheat your oven to 350°F (175°C).
  7. Bake Monkey Bread: Place the Bundt pan in the oven and bake for 25 to 30 minutes, or until the rolls are golden brown and cooked through.
  8. Cool and Invert: Transfer the pan to a cooling rack and allow it to cool for 5 minutes. Then set a plate larger than the pan over the top and carefully invert the pan to release the monkey bread.
  9. Serve Immediately: Be cautious as the pan, rolls, and drippings will be hot. Serve the sticky pecan monkey bread warm for best flavor and texture.

Notes

  • Be sure to use the Cook ‘n Serve butterscotch pudding mix, not instant, to achieve the perfect sticky texture.
  • Using frozen rolls allows for an easy overnight rise and infuses great flavor into the bread.
  • Letting the bread cool slightly before inverting helps it hold its shape better.
  • This monkey bread is best served the same day it is baked for optimal freshness and gooey texture.
  • Storage: Leftovers can be stored in an airtight container for up to 2 days and reheated gently.
