Deliciously sweet and nutty sticky bun bites made with flaky puff pastry, a cinnamon-brown sugar butter filling, and crunchy pecans. Perfect as bite-sized treats for parties or cozy breakfasts.

Ingredients

Nut Base

  • 3/4 cup crushed pecans, divided

Pastry

  • 1 sheet frozen puff pastry, defrosted

Filling

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup dark brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare the Oven and Pan: Preheat the oven to 400°F. Spray a 24-cup mini muffin pan with non-stick cooking spray and add 1/2 teaspoon of crushed pecans in each cup. Set aside.
  2. Mix the Filling: In a medium bowl, combine the unsalted butter, dark brown sugar, and ground cinnamon. Stir well until the mixture is smooth and fully blended.
  3. Roll Out Puff Pastry: Lightly flour a large work surface. Unfold the defrosted puff pastry sheet and roll it out into a 14×11-inch rectangle to create an even surface for the filling.
  4. Assemble the Rolls: Spread the butter-sugar-cinnamon mixture evenly over the puff pastry. Sprinkle the remaining crushed pecans uniformly over the filling. Starting from the long edge, roll the pastry tightly like a jelly roll, sealing the seam by placing it down on the work surface. Trim off the ends of the roll and discard.
  5. Slice and Place in Pan: Cut the rolled pastry into 24 equal pieces, approximately 1/2 inch thick each. Place each slice into the prepared muffin cups, on top of the crushed pecans.
  6. Bake: Bake the sticky bun bites for about 16 minutes or until golden brown on top and firm to the touch. Remove from the oven and allow to cool for 5 minutes in the pan.
  7. Invert and Glaze: Carefully invert the muffin pan onto a parchment-lined baking sheet to release the sticky bun bites along with the glaze and pecans from the bottom of the cups. Remove the pan and spoon any leftover filling and pecans from the pan onto the tops of the buns for extra sweetness and crunch.
  8. Serve: Enjoy your sticky bun bites warm or let them cool completely before serving.

Notes

  • Make sure the puff pastry is fully defrosted before rolling to prevent tearing.
  • For extra nutty flavor, you can toast the pecans lightly before using.
  • If you prefer a sweeter glaze, drizzle a simple icing made of powdered sugar and milk over the sticky bun bites after baking.
  • These bites are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
  • If mini muffin pan is not available, use a regular muffin pan but reduce the baking time slightly as the buns will be larger.
