Ingredients

Egg Mixture

  • 3 large egg whites
  • 1 large egg
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon shredded reduced-fat Cheddar cheese
  • ¼ teaspoon salt
  • ⅛ teaspoon red pepper flakes
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon ground black pepper

Vegetables & Oil

  • ½ teaspoon olive oil
  • ½ cup sliced fresh mushrooms
  • ¼ cup diced green onions
  • 2 tablespoons finely chopped red bell pepper
  • 1 cup torn fresh spinach
  • ½ cup diced fresh tomato

Instructions

  1. Gather Ingredients: Collect all ingredients needed for the recipe to ensure a smooth cooking process.
  2. Prepare Egg Mixture: In a small bowl, whisk together the 3 egg whites and 1 whole egg. Incorporate the grated Parmesan cheese, shredded reduced-fat Cheddar cheese, salt, red pepper flakes, garlic powder, ground nutmeg, and black pepper until well combined.
  3. Sauté Vegetables: Heat ½ teaspoon of olive oil in a large skillet over medium heat. Add the sliced mushrooms, diced green onions, and finely chopped red bell pepper. Cook until the vegetables are tender, approximately 5 minutes.
  4. Add Spinach and Tomato: Add the torn fresh spinach to the skillet and cook until just wilted, about 1 to 2 minutes. Stir in the diced fresh tomato evenly with the veggies.
  5. Cook Omelet: Pour the prepared egg mixture over the sautéed vegetables in the skillet. As the eggs begin to set, gently lift the edges to allow the uncooked egg to flow underneath. Continue cooking the omelet until the egg mixture is fully set, which should take about 10 to 15 minutes.
  6. Serve: Once cooked, cut the omelet into wedges and serve immediately, ideally with a slice of whole grain toast and fresh fruit.

Notes

  • Using a non-stick skillet helps prevent the omelet from sticking and makes flipping or folding easier.
  • Feel free to substitute or add other fresh vegetables such as bell peppers of different colors or zucchini.
  • Adjust the red pepper flakes to control the spice level according to your preference.
  • For a richer flavor, you can add a small amount of butter to sauté the vegetables instead of olive oil.
  • This omelet can be enjoyed as a light lunch or dinner alternative as well.
