Ingredients

Noodles

  • 16 ounces brown rice noodles

Sauce

  • 3 large cloves garlic or 4-5 small garlic cloves, finely minced
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon oil (olive oil recommended)
  • 2/3 cup creamy peanut butter
  • 4 tablespoons low sodium tamari or soy sauce
  • 1/3 to 1 cup hot water
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1-2 tablespoons sriracha
  • 1-2 tablespoons maple syrup or honey
  • 1/2 teaspoon red pepper flakes (optional or omit for less spice)
  • Optional: 2 teaspoons chili garlic sauce

Toppings (optional)

  • Crushed peanuts
  • Chopped scallions
  • Additional red pepper flakes

Instructions

  1. Boil water: Bring a large pot of water to a rolling boil to prepare for cooking the noodles.
  2. Cook noodles: Add the brown rice noodles to the boiling water and cook according to the package instructions until al dente. Drain and set aside.
  3. Sauté garlic: Finely mince the garlic cloves. Heat 1 tablespoon of oil in a sauté pan over low heat, then add the minced garlic.
  4. Cook garlic and ginger: Sauté the garlic gently for about 2 minutes or until golden brown, then add the grated ginger and cook together for an additional minute to release their aromas.
  5. Prepare sauce: Remove the pan from heat and add in the peanut butter, tamari or soy sauce, rice vinegar, toasted sesame oil, sriracha, maple syrup or honey, red pepper flakes, and chili garlic sauce if using.
  6. Mix sauce with water: Start whisking the sauce ingredients together, gradually adding 1/3 cup of hot water at first. Continue adding more hot water as needed until the sauce is smooth and reaches your preferred consistency.
  7. Taste and adjust: Taste the sauce and adjust seasoning by adding more soy sauce for saltiness, more sriracha for heat, or other ingredients to suit your preference.
  8. Combine sauce with noodles: Add about half of the sauce to the cooked noodles and toss well to coat evenly.
  9. Adjust sauce amount: Add more sauce depending on your desired sauciness; start with half and add up to all if you prefer a more saucy dish.
  10. Serve: Plate the noodles and garnish with crushed peanuts, chopped scallions, and additional red pepper flakes if desired. Enjoy alongside your choice of vegetables or protein for a complete meal.

Notes

  • Adjust the amount of hot water in the sauce depending on the peanut butter brand and your preferred sauce thickness.
  • Red pepper flakes and chili garlic sauce can be omitted or adjusted to suit spice tolerance.
  • Use low sodium tamari or soy sauce to keep salt levels moderate.
  • This dish pairs well with grilled chicken, tofu, or steamed vegetables.
  • For a vegan version, use maple syrup instead of honey and ensure the soy sauce is vegan-friendly.
