Southwest Roasted Potatoes is a flavorful and colorful side dish featuring crispy baked potatoes tossed with bell peppers, red onion, and a vibrant blend of chili powder, paprika, cumin, oregano, and garlic powder. This easy-to-make recipe delivers a perfect balance of smoky, spicy, and savory flavors that complement any main course.

Ingredients

Vegetables

  • 2 large baking potatoes
  • 1 red bell pepper
  • 1 green bell pepper
  • 1/2 red onion

Spices and Oil

  • 2 Tbsp vegetable oil
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1 tsp oregano
  • 1 tsp garlic powder
  • About 1 tsp salt (to taste)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet (approximately 17x11x1 inches) with aluminum foil for easy clean-up.
  2. Prepare Potatoes: Wash and cut the baking potatoes into roughly 1/2-inch cubes. Transfer the cubes to a large mixing bowl.
  3. Prepare Vegetables: Cut the red and green bell peppers and the red onion into pieces about the same size as the potato cubes. Add these to the mixing bowl with the potatoes.
  4. Add Spices: Sprinkle all the spices—chili powder, paprika, cumin, oregano, garlic powder, and salt—over the potatoes and vegetables. Mix thoroughly to ensure everything is evenly coated.
  5. Add Oil: Drizzle the vegetable oil over the mixture and stir well to evenly distribute the oil among the ingredients.
  6. Spread on Baking Sheet: Spread the potato and vegetable mixture evenly across the prepared baking sheet in a single layer for even roasting.
  7. Bake: Place the baking sheet in the preheated oven and roast for 35 to 40 minutes, stirring halfway through if desired, until the potatoes are tender and golden brown on the edges.

Notes

  • For extra crispiness, flip or stir the potatoes halfway through baking.
  • You can customize the spices to your taste; consider adding cayenne for more heat or smoked paprika for deeper flavor.
  • This dish pairs well with grilled meats, tacos, or as a hearty vegetarian side.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best texture.
