Slow-cooked to perfection, it's served over linguine noodles and garnished with chopped peanuts and cilantro for a satisfying Thai-inspired dinner.

Ingredients

Chicken and Sauce

  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 teaspoons minced garlic (about 2 cloves)
  • ⅔ cup peanut butter
  • 1 cup chicken broth
  • 1 cup shredded zucchini
  • ⅓ cup soy sauce
  • 1 teaspoon sugar
  • 1 sliced red pepper
  • 1 tablespoon lime juice
  • ½ cup chopped cilantro (plus more for garnish)

To Serve

  • 12 ounces cooked and drained linguine noodles
  • Chopped peanuts (for garnish)

Instructions

  1. Combine Ingredients: In the slow cooker, add the cubed chicken breasts, minced garlic, peanut butter, chicken broth, shredded zucchini, soy sauce, sugar, and sliced red pepper. Stir everything well to combine all the flavors evenly.
  2. Slow Cook: Set the slow cooker to LOW and cook for 4 to 5 hours, or alternatively on HIGH for 2 to 3 hours. This slow cooking process will tenderize the chicken and meld the flavors perfectly.
  3. Add Fresh Ingredients: About 30 minutes before serving, stir in the lime juice and chopped cilantro. Continue to cook on the slow cooker setting for the remaining 30 minutes to allow the fresh flavors to infuse the dish.
  4. Serve: Spoon the Thai peanut chicken mixture over the cooked and drained linguine noodles. Garnish generously with chopped peanuts and additional chopped cilantro for added texture and vibrant flavor.

Notes

  • You can substitute chicken thighs for a juicier texture if preferred.
  • Use low-sodium soy sauce to reduce salt content.
  • If you want a spicier kick, add a pinch of red pepper flakes or sliced fresh chili.
  • Leftovers can be refrigerated for up to 3 days and reheated gently.
  • For a gluten-free version, substitute soy sauce with tamari and serve over rice noodles instead of linguine.
