Ingredients

Beef and Vegetables

  • 2 lbs. beef strips
  • 1 green bell pepper, sliced thick
  • 1 red bell pepper, sliced thick
  • 1 white onion, sliced

Sauce and Seasonings

  • ½ cup water
  • 2 beef bouillon cubes
  • 3 Tbsp. soy sauce
  • 1 tsp. Worcestershire sauce
  • ¼ tsp. ground ginger
  • ¼ tsp. garlic powder
  • ½ tsp. black pepper
  • 2 tsp. brown sugar (or honey or white sugar)
  • 1 Tbsp. cornstarch
  • ¼ tsp. red pepper flakes (optional)

Instructions

  1. Prepare the Bouillon Mixture: In a small microwavable bowl, combine ½ cup water with 2 beef bouillon cubes. Microwave for 30 seconds, then stir thoroughly with the back of a spoon or whisk tip to dissolve the cubes completely. Alternatively, if you don't have a microwave, boil the water on the stovetop and dissolve the bouillon cubes in the hot water.
  2. Make the Sauce: To the bouillon mixture, add 3 tablespoons soy sauce, 1 teaspoon Worcestershire sauce, ¼ teaspoon ground ginger, ¼ teaspoon garlic powder, ½ teaspoon black pepper, 2 teaspoons brown sugar, and 1 tablespoon cornstarch. Whisk everything until the mixture is smooth and well combined. Add the optional ¼ teaspoon red pepper flakes if you desire a bit of heat.
  3. Combine Ingredients in Slow Cooker: Pour the prepared sauce into the slow cooker. Then, add the 2 pounds of beef strips along with the sliced green and red bell peppers and the sliced white onion on top of the sauce.
  4. Cook Low and Slow: Cover the slow cooker with its lid and cook on the LOW setting for 5 hours, allowing the beef to tenderize and the flavors to meld beautifully.

Notes

  • For a spicier dish, increase the red pepper flakes to taste.
  • Serve over steamed rice or noodles for a complete meal.
  • You can substitute beef strips with thinly sliced pork or chicken breast if preferred.
  • To thicken the sauce further after cooking, remove the lid and cook on HIGH for an additional 15-20 minutes.
  • Using fresh ginger in place of ground ginger can add a more vibrant flavor.
