Ingredients

Meat and Vegetables

  • 1 pound ground beef (sirloin, 93/7 recommended)
  • 1 cup matchstick carrots
  • 1 medium red bell pepper, sliced
  • 2-3 large scallions, roughly chopped (plus extra for garnish)
  • 3 cloves garlic, minced

Liquid and Flavorings

  • 1/2 cup low sodium soy sauce
  • 2 tablespoons brown sugar
  • 14.25 ounces chicken stock (or beef stock)

Noodles and Garnish

  • 2 packs ramen noodles (discard seasoning packets)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Brown the Beef: Heat a large skillet over medium heat and cook the ground beef until it is no longer pink, breaking it up as it cooks. Drain any excess grease to keep the dish from being oily.
  2. Transfer to Slow Cooker: Pour the cooked beef into the basin of a 6-quart slow cooker, setting the base for your ramen broth and toppings.
  3. Add Vegetables: Add the matchstick carrots, sliced red bell pepper, and roughly chopped scallions into the slow cooker with the beef.
  4. Prepare Sauce: In a medium bowl, whisk together the minced garlic, low sodium soy sauce, brown sugar, and chicken stock to create a flavorful broth.
  5. Combine Ingredients: Pour the prepared sauce over the beef and vegetables in the slow cooker and stir gently to combine all ingredients evenly.
  6. Slow Cook: Cover the slow cooker and cook on LOW for 4 to 6 hours to develop rich, melded flavors and tender vegetables.
  7. Add Noodles: About 30 minutes before serving, add the dry ramen noodles into the slow cooker, discarding any seasoning packets included with the noodles.
  8. Stir Frequently: Stir the noodles around occasionally to ensure even coverage and prevent sticking, allowing them to soften and absorb the broth.
  9. Serve: Once the noodles are tender, dish out servings and garnish with extra chopped scallions and sesame seeds for added texture and flavor.

Notes

  • Discard seasoning packets from ramen noodles as they are not needed and may overpower the slow-cooked broth.
  • Use low sodium soy sauce to keep the sodium level manageable in the dish.
  • Stir noodles frequently after adding to prevent clumping and ensure they cook evenly.
  • For a spicier version, consider adding chili flakes or Sriracha to the broth.
  • This recipe is easy to double for larger gatherings using a bigger slow cooker.
  • Feel free to substitute ground beef with ground turkey or chicken for a lighter protein option.
