This Slow Cooker BBQ Chicken recipe features tender, flavorful chicken breasts slow-cooked in smoky BBQ sauce and spices. Perfect for easy weeknight dinners or meal prep, this shredded chicken can be served on buns, nachos, baked potatoes, or used in various dishes. The slow cooking method ensures the chicken is juicy and infused with a rich BBQ flavor.

Ingredients

Chicken

  • 2 boneless, skinless chicken breasts (about 1.3 lbs)

Seasoning

  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper (freshly cracked)

Sauce

  • 18 oz BBQ sauce

Instructions

  1. Prepare the seasoning mix: Combine the smoked paprika, garlic powder, salt, and black pepper in a small bowl to create a flavorful spice blend.
  2. Season the chicken: Sprinkle the seasoning mixture evenly over both sides of the chicken breasts, coating them thoroughly for optimal flavor.
  3. Place chicken in slow cooker: Arrange the seasoned chicken breasts in the slow cooker in a single layer to ensure even cooking.
  4. Add BBQ sauce: Pour the BBQ sauce over the chicken breasts making sure they are fully covered to infuse flavor and keep the chicken moist during cooking.
  5. Cook the chicken: Cover the slow cooker with the lid and cook the chicken on high for 2.5 hours or on low for 4 to 5 hours until the chicken is tender.
  6. Shred the chicken: Once cooked, use two forks to shred the chicken into bite-sized pieces. If the chicken doesn’t shred easily, cook for a bit longer until tender.
  7. Serve: Enjoy the pulled BBQ chicken on buns, atop nachos, over baked potatoes, as a pizza topping, or with any of your favorite meals.

Notes

  • For even more flavor, marinate the chicken with the seasoning mixture for 30 minutes before cooking.
  • Adjust slow cooker times based on your device; slow cookers may vary in temperature.
  • Use your favorite brand or homemade BBQ sauce to customize flavor profiles.
  • Leftover shredded chicken can be stored in an airtight container in the refrigerator for up to 4 days.
  • Chicken can also be cooked on low for 4-5 hours for a more tender texture.
