Ingredients

Meat and Vegetables

  • 1 lb. ground beef (85% lean)
  • ½ cup onions (diced)
  • 1 cup corn (frozen or drained from a can)

Liquids and Sauces

  • 1 15.5 oz can Manwich sauce
  • 2 ½ cups chicken broth
  • 1 14.5 oz. can diced tomatoes (not drained)

Pasta and Cheese

  • ¾ pound farfalle pasta (uncooked)
  • 8 oz. Velveeta cheese (cubed)
  • 1 ½ cups cheddar cheese (shredded)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole later.
  2. Cook Beef and Onions: In a large, high-walled skillet or pot over medium-high heat, cook and crumble the ground beef for about 2 minutes. Add diced onions and continue cooking for 5 more minutes, until the beef is browned and the onions are softened. Drain excess grease to keep the dish from being too oily.
  3. Add Sauces and Liquids: Stir in the Manwich sauce, chicken broth, and undrained diced tomatoes into the beef mixture, combining all ingredients thoroughly.
  4. Boil and Cook Pasta: Bring the mixture to a gentle boil. Add the uncooked farfalle pasta and stir to combine evenly. Cover and allow it to boil gently until the pasta is al dente, stirring occasionally to prevent sticking. This may take a few minutes longer than the package instructions due to gentle boiling. Test pasta for doneness before continuing.
  5. Add Corn and Melt Cheese: Reduce the heat to low. Stir in the corn and cubed Velveeta cheese. Cover the pot to let the cheese melt completely, then lift the cover occasionally to stir gently until the cheese is fully incorporated.
  6. Transfer to Casserole Dish: Lightly grease a 9 x 13 inch casserole dish and transfer the pasta mixture into it evenly.
  7. Top with Cheddar: Sprinkle the shredded cheddar cheese evenly over the top of the casserole for a cheesy crust.
  8. Bake the Casserole: Cover the dish and bake in the preheated oven for 15 minutes. Remove the cover and serve hot, ideally accompanied by cornbread for a classic meal pairing.

Notes

  • If you prefer a spicier kick, add a dash of hot sauce or chili powder when adding Manwich sauce.
  • You can substitute ground turkey for beef for a leaner option.
  • Make sure to stir the pasta mixture occasionally during boiling to prevent it from sticking and burning on the bottom.
  • Velveeta gives the casserole a creamy texture, but you can replace it with cream cheese or a mild melting cheese if preferred.
  • Leftovers keep well in the refrigerator for up to 3 days and reheat nicely in the oven or microwave.
