This Skinny Lemongrass Mojito is a refreshing and low-calorie twist on the classic mojito, featuring aromatic lemongrass, fresh mint, and basil leaves, sweetened naturally with Truvia. Perfect for those seeking a light yet flavorful cocktail with a tropical flair, it combines fresh lime juice and white rum with sparkling water for a crisp finish.

Ingredients

Herbs and Sweetener

  • 2 lemongrass stalks, plus extra pieces for garnish
  • About 15 fresh mint leaves, plus 2 sprigs for garnish
  • 8 basil leaves, chopped
  • 2 teaspoons Truvia Natural Sweetener

Liquids

  • 5 tablespoons fresh lime juice (about 2-3 limes), plus 2 slices for garnish
  • 6 tablespoons white rum (3 ounces)
  • ½ cup sparkling water, more as needed

Others

  • Crushed ice

Instructions

  1. Prepare Lemongrass: Cut off the root end and tough upper stem of the lemongrass stalks. Peel away the tough outer layers to reveal the tender pale lower sections. Using the back of a chef's knife, bash the inner leaves to release the oils and fragrance. Finely chop to yield about 3 tablespoons.
  2. Muddle Ingredients: In a cocktail shaker, combine the chopped lemongrass, mint leaves, chopped basil, and Truvia sweetener. Muddle thoroughly with a cocktail muddler or the back of a large spoon to release the essential oils and aromas.
  3. Mix Cocktail: Add the fresh lime juice, white rum, and a handful of ice cubes to the shaker. Shake vigorously until well mixed and chilled.
  4. Prepare Glasses: Fill two glasses with crushed ice. Strain the cocktail mixture evenly into each glass, including a small spoonful of the muddled herbs for extra flavor and texture.
  5. Top and Garnish: Top each glass with sparkling water to desired taste. Garnish each serving with a fresh sprig of mint and a 4-inch piece of lemongrass stalk for an elegant presentation. Add a slice of lime to each glass as well.

Notes

  • For a sweeter drink, adjust the amount of Truvia or add a natural sweetener like honey or agave syrup.
  • To make it non-alcoholic, omit the rum and increase sparkling water or add club soda.
  • Crushed ice is preferred for better dilution and chilling effect.
  • Use fresh herbs and lime juice for the best flavor.
  • Lemongrass can be found in Asian grocery stores or well-stocked supermarkets.
