This Shrimp Egg Roll in a Bowl is a quick and flavorful low-carb meal that combines sautéed shrimp with a medley of cabbage, carrots, and aromatic seasonings. Inspired by the traditional egg roll filling, this recipe skips the wrapper for a lighter, healthier dish packed with savory and tangy flavors. Perfect for a weeknight dinner, it takes just 35 minutes to prepare and serves 4.

Ingredients

Vegetables

  • 1 small yellow onion, diced
  • 5 cups roughly chopped green cabbage
  • 1/2 cup finely chopped carrots
  • 1 tbsp minced garlic
  • 4 green onions, sliced

Proteins

  • 1 lb. shrimp, peeled and deveined, tails removed

Oils and Sauces

  • 1 tbsp olive oil
  • 1 tbsp sesame oil
  • 1/4 cup reduced sodium soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tbsp sweet red chili sauce

Garnish (Optional)

  • 1 tbsp sesame seeds

Instructions

  1. Heat the olive oil: In a large sauté pan, warm 1 tablespoon of olive oil over medium heat to prepare for cooking the vegetables.
  2. Sauté the vegetables: Add diced onion, chopped cabbage, carrots, and minced garlic to the pan. Cook for about 10 minutes, stirring frequently, until the cabbage softens and the carrots become tender, creating a flavorful vegetable base.
  3. Cook the shrimp: Push the cooked vegetables to the sides of the pan, leaving an empty space in the middle. Pour in 1 tablespoon of sesame oil into the space and allow it to heat for one minute. Add the shrimp to this space and cook for 2 to 4 minutes, stirring occasionally, until the shrimp turn pink and opaque, ensuring they are fully cooked.
  4. Add sauces and finish: Stir in the rice wine vinegar, reduced sodium soy sauce, sweet red chili sauce, sliced green onions, and optional sesame seeds. Combine everything well and cook for an additional minute to meld the flavors. Serve immediately and enjoy your Shrimp Egg Roll in a Bowl.

Notes

  • Use fresh shrimp for best flavor and texture; frozen shrimp can be used but should be fully thawed and patted dry before cooking.
  • Adjust sweetness and heat by varying the amount of sweet red chili sauce to your preference.
  • For a gluten-free version, substitute the soy sauce with tamari or coconut aminos.
  • Serve with steamed rice or cauliflower rice for a more filling meal if desired.
  • The optional sesame seeds add a nice crunch and toasted flavor but can be omitted for nut-free or seed-free diets.
