These Sheet Pan Tacos are a quick and easy vegetarian meal featuring seasoned mashed beans and melted cheese baked to crispy perfection on flour tortillas. Perfect for a simple weeknight dinner, they deliver classic taco flavors with minimal prep and cleanup.

Ingredients

Bean Mixture

  • 1 (15oz) can pinto beans or black beans, drained and rinsed
  • 1/2 cup salsa
  • 1 teaspoon taco seasoning

Tacos

  • 1 cup shredded cheese (Mexican blend recommended)
  • 6 (6″ taco sized) flour tortillas
  • 2 teaspoons avocado oil or other neutral oil

Instructions

  1. Preheat the Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the tacos.
  2. Prepare the Bean Mixture: In a bowl, mash together the drained and rinsed beans with the salsa and taco seasoning until well combined but still slightly chunky.
  3. Assemble the Tacos: Lightly brush one side of each tortilla with avocado oil. Place the tortillas oiled side down on a baking sheet. On one half of each tortilla, spread an even portion of the bean mixture, then sprinkle shredded cheese on top. Fold the tortillas over to form tacos.
  4. Bake the Tacos: Bake the tacos in the preheated oven for 8 to 10 minutes. Carefully flip each taco and bake for an additional 6 to 8 minutes, or until the tortillas are golden brown and crispy.
  5. Serve: Remove the tacos from the oven and let them cool slightly. Serve with your choice of toppings such as cilantro sauce, burrito sauce, or fresh cilantro.

Notes

  • For extra crispiness, you can brush the outside of both sides of the tortillas with oil before baking.
  • Substitute cheese with a dairy-free alternative for a vegan option.
  • Use black beans or pinto beans depending on your preference.
  • Serve with fresh toppings like avocado slices, diced onions, or jalapeños to enhance flavor.
  • This recipe is easily doubled or tripled for larger gatherings.
