Ingredients

Vegetables

  • 3 bell peppers, seeded and sliced
  • 1 yellow onion, sliced
  • 3 cloves garlic, minced

Seasonings & Oils

  • ½ teaspoon sea salt, divided
  • ½ teaspoon ground pepper
  • 1½ tablespoons olive oil, divided (1 tablespoon + ½ tablespoon)
  • 1 tablespoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon onion powder

Protein

  • 1 lb. fresh shrimp, peeled and deveined

Other

  • 5-6 small corn tortillas
  • Toppings: salsa, avocado and cilantro, sour cream or Greek yogurt

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the vegetables and shrimp.
  2. Bake Veggies: In a mixing bowl, toss the sliced bell peppers and yellow onion with minced garlic, ½ teaspoon sea salt, ½ teaspoon ground pepper, and 1 tablespoon olive oil. Spread the mixture evenly on a sheet pan, then bake for 10-12 minutes until the vegetables start to soften and caramelize.
  3. Season Shrimp: While the vegetables are baking, place the peeled and deveined shrimp in a bowl. Toss them with ½ tablespoon olive oil, chili powder, cumin, onion powder, and ¼ teaspoon sea salt to evenly coat the shrimp with the spices.
  4. Bake Shrimp: Remove the sheet pan from the oven. Toss the cooked vegetables and push them to one side of the pan. Add the seasoned shrimp to the other side of the sheet pan, then return it to the oven. Bake for an additional 10 minutes or until the shrimp are no longer translucent and are fully cooked through.
  5. Warm Tortillas and Serve: Warm the corn tortillas in the oven or on a stovetop. Serve the roasted shrimp and vegetables inside the warm tortillas, topped with salsa, avocado, fresh cilantro, and a dollop of sour cream or Greek yogurt. Enjoy!

Notes

  • Use fresh shrimp for best flavor and texture. If using frozen shrimp, thaw completely and pat dry before seasoning.
  • If you prefer spicier fajitas, add a pinch of cayenne pepper to the shrimp seasoning.
  • To make this recipe gluten-free, ensure the corn tortillas are gluten-free certified.
  • For a smoky flavor, consider adding smoked paprika to the shrimp seasoning blend.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated gently in the oven or stovetop.
