A quick and delicious recipe for sautéed asparagus and mushrooms, featuring tender asparagus spears and juicy mushrooms cooked in garlic-infused oil. Perfect as a healthy side dish or a light vegetarian meal.

Ingredients

Ingredients

  • 1 tablespoon vegetable oil (olive oil or avocado oil would work)
  • 2 cloves garlic, minced
  • 2 bunches asparagus, woody ends removed and cut into smaller pieces
  • 8 oz. button or cremini mushrooms
  • ½ teaspoon kosher salt (adjust to taste)
  • ¼ teaspoon black pepper

Instructions

  1. Saute garlic: Heat the oil in a large 12-inch skillet over medium heat. Add the minced garlic and sauté for about one minute until fragrant but not browned.
  2. Saute vegetables: Add the asparagus pieces and mushrooms to the skillet. Cook while stirring often until the mushrooms release their juices and the asparagus turns tender, approximately 5 to 7 minutes.
  3. Finish and serve: Season the vegetables with kosher salt and black pepper to taste. Serve immediately while warm for the best flavor and texture.

Notes

  • For best results, use fresh asparagus with bright green color and firm stalks.
  • Button mushrooms or cremini mushrooms both work well; cremini has a slightly deeper flavor.
  • You can substitute vegetable oil with olive oil or avocado oil for a healthier choice.
  • Cook times may vary slightly depending on the thickness of the asparagus stalks.
  • This recipe is great as a side dish or as part of a vegetarian meal.
