Ingredients

Meat and Vegetables

  • 1 pound ground Italian sausage (hot or mild)
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups kale, chopped

Spices and Seasonings

  • 1 teaspoon dried basil
  • ½ teaspoon oregano
  • 1 pinch cayenne pepper (optional)
  • 1 teaspoon hot sauce
  • ½ teaspoon mustard powder
  • ¼ teaspoon black pepper
  • 1 pinch red pepper flakes
  • Salt, to taste

Liquids and Others

  • 3 tablespoons flour
  • 1 cup heavy cream
  • 5 cups chicken broth
  • 2 cups tortellini (slightly under 10 oz., refrigerated or frozen)

Instructions

  1. Prepare the Sausage and Onion: Remove the casings from the sausage if using links. In a large pot, cook and crumble the sausage with the diced onion over medium-high heat until the onion is softened and the sausage is fully cooked, about 8-10 minutes. Drain excess grease.
  2. Add Garlic: Stir in the minced garlic and cook for about 1 minute until fragrant.
  3. Incorporate Flour: Sprinkle the flour over the sausage mixture and cook for 1-2 minutes, stirring frequently to eliminate the raw flour taste.
  4. Mix Spices and Sauces: Add dried basil, oregano, cayenne pepper if using, hot sauce, mustard powder, black pepper, and red pepper flakes. Stir well to combine all flavors evenly.
  5. Add Liquids: Pour in the chicken broth, using a silicone spatula to scrape the bottom of the pot to release any browned bits. Slowly stir in the heavy cream. Bring the soup to a boil, then reduce heat and let it simmer.
  6. Add Kale and Tortellini: Stir in the chopped kale and tortellini. Simmer the soup for 3-5 minutes, or longer if your tortellini requires more time. If needed, add tortellini first and kale in the last 5 minutes to cook properly.
  7. Season to Taste: Taste the soup and add salt as desired, starting with ¼ teaspoon and adjusting accordingly.
  8. Serve: Ladle the soup into bowls and serve hot. This soup pairs wonderfully with cheesy garlic bread.

Notes

  • Mustard powder and hot sauce add subtle but important layers of flavor that enhance the overall soup.
  • Use either hot or mild Italian sausage according to your heat preference.
  • Frozen tortellini can be used directly in the soup without thawing.
  • Kale adds a nutritious green element; other greens like spinach can be substituted if desired.
  • For thicker soup, use less chicken broth or add more flour during cooking.
