Marinated in a blend of olive oil and spices, then grilled to perfection, they make a quick and satisfying meal perfect for any outdoor cookout or weeknight dinner.

Ingredients

Sausage and Vegetables

  • 1 (13-ounce) package smoked turkey sausage, cut into 1 to 1-1/2 inch pieces
  • 3 bell peppers (red, green, and orange), cut into 1-inch pieces
  • 1/2 large red onion, cut into 1-inch pieces
  • 10 large baby bella mushrooms, halved or whole

Marinade and Seasoning

  • 4 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 tablespoon dried parsley flakes
  • 1/2 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For Grilling

  • Vegetable oil (for oiling the grill grates)

Optional Garnish and Sauce

  • Coarsely chopped flat-leaf parsley (optional)
  • Sauce for serving (optional, see notes)

Instructions

  1. Prepare: Begin by preheating your grill to medium-high heat, approximately 450–500°F. If you're using wooden skewers, soak them in water for 20 to 30 minutes to prevent them from burning during grilling.
  2. Prepare Veggies and Sausage: Cut the smoked turkey sausage into slices about 1 to 1-1/2 inches thick. Chop the bell peppers and red onion into 1-inch pieces. Halve the larger baby bella mushrooms, leaving smaller ones whole for even cooking.
  3. Mix: In a large bowl, combine the prepared sausage and vegetables. Drizzle with olive oil and sprinkle with dried oregano, dried parsley flakes, garlic powder, paprika, salt, and black pepper. Gently toss everything together until well coated with the seasoning mixture.
  4. Add to Skewers: Thread the seasoned sausage and vegetables evenly onto the soaked skewers, alternating pieces for a colorful presentation.
  5. Grill: Soak a paper towel in vegetable oil, roll it up, and using tongs, carefully rub it along the cleaned and fully heated grill grates to prevent sticking. Place the kabobs on the grill and close the lid. Grill for 3 to 4 minutes on one side until lightly charred, then flip and grill for another 3 to 4 minutes or until all sides have a nice char and the sausage is heated through.
  6. Serve: Remove the kabobs from the grill. Optionally garnish with freshly chopped flat-leaf parsley. Serve immediately, either as is or with your favorite sauce.

Notes

  • For added flavor, serve the kabobs with your choice of dipping sauces such as tzatziki, barbecue sauce, or a spicy mustard sauce.
  • Soaking wooden skewers before grilling helps prevent them from burning or catching fire.
  • Adjust seasoning amounts to taste, especially salt and pepper.
  • You can substitute smoked turkey sausage with other sausages such as beef, pork, or chicken according to preference.
  • If grilling is not possible, these kabobs can be cooked under a broiler or in a grill pan on the stovetop.
