This comforting Sausage Hash Brown Breakfast Casserole is a hearty, satisfying dish perfect for brunch or a weekend breakfast. Featuring savory hot breakfast sausage, crispy hash browns, melted cheddar cheese, and a flavorful custard of eggs and milk, it's easy to prepare and bake to golden perfection.

Ingredients

Sausage and Hash Browns

  • 2 lb hot breakfast sausage
  • 1 (30-32 oz) bag frozen shredded hash browns
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 cups shredded cheddar cheese

Custard Mixture

  • 8 eggs
  • 2 cups milk

Instructions

  1. Preheat the oven: Preheat your oven to 350ºF and lightly spray a 9x13-inch baking pan with cooking spray to prevent sticking.
  2. Cook the sausage: In a large skillet over medium heat, cook the hot breakfast sausage until it's no longer pink and cooked through. Drain off excess fat and set the sausage aside.
  3. Prepare the hash browns: Add the frozen shredded hash browns to the same skillet and cook until they are lightly browned, adding a bit of oil if necessary to prevent sticking. Then spread the hash browns evenly in the bottom of the prepared 9x13-inch baking pan.
  4. Layer the casserole: Evenly distribute the cooked sausage over the hash browns, then sprinkle the shredded cheddar cheese on top.
  5. Mix the custard: In a large bowl, whisk together the eggs, salt, pepper, garlic powder, onion powder, and milk until fully combined and smooth.
  6. Assemble and refrigerate if desired: Pour the egg mixture evenly over the layered hash browns, sausage, and cheese. If you are not baking immediately, cover the pan and refrigerate until ready to bake.
  7. Bake the casserole: Bake the casserole uncovered in the preheated oven for 35-40 minutes, or until the top is golden and the egg custard has set.
