These Sausage Egg and Cheese Breakfast Roll-Ups are a delicious, easy-to-make breakfast treat that combines savory sausage, fluffy scrambled eggs, and melted cheddar cheese all wrapped in flaky crescent roll dough. Perfect for a quick morning meal or brunch, they bake to a golden brown perfection in just under 30 minutes.

Ingredients

Egg Mixture

  • 4 large eggs
  • 2 tbsp milk

Other Ingredients

  • 8 oz refrigerated crescent rolls (usually 8 count)
  • 8 sausage links
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat Oven: Heat oven to 350°F (175°C) to prepare for baking the roll-ups.
  2. Cook Sausage: In a medium skillet over medium heat, cook the sausage links until completely cooked through, ensuring no pink remains inside. While the sausages cook, prepare the eggs.
  3. Prepare Eggs: In a small bowl, beat the 4 eggs with 2 tablespoons of milk. Reserve 2 tablespoons of this beaten egg to brush on top of the crescent rolls later. Scramble the remaining egg mixture in the skillet until just cooked, fluffy, and lightly set.
  4. Prepare Crescent Dough: Unroll the refrigerated crescent dough onto a clean work surface. Separate the dough into 8 individual triangular pieces as indicated on the package.
  5. Assemble Roll-Ups: On the larger end of each crescent roll triangle, place one fully cooked sausage link. Top each sausage with about 1 tablespoon of the scrambled eggs and then sprinkle a generous pinch of shredded cheddar cheese on top.
  6. Roll Up: Carefully and loosely roll each triangle from the larger end toward the point, keeping the sausage, eggs, and cheese securely inside. Use your fingers to help keep the filling from falling out as you roll. Place the assembled roll-ups seam side down on an ungreased cookie sheet, spacing them evenly.
  7. Brush and Bake: Brush the tops of each crescent roll with the reserved 2 tablespoons of beaten egg to achieve a golden, glossy finish. Bake in the preheated oven for 16 to 18 minutes, or until the crescent rolls turn golden brown on top and are fully cooked through.
  8. Serve: Remove from oven and let cool slightly before serving warm as a satisfying breakfast or brunch option.

Notes

  • You can substitute breakfast sausage links with vegetarian sausage alternatives for a different dietary option.
  • For extra flavor, consider adding chopped bell peppers or onions to the scrambled eggs before assembling.
  • Make sure not to overfill the crescent rolls to avoid the filling leaking out during baking.
  • Leftovers can be stored in the refrigerator and reheated in the oven or microwave.
