A hearty and savory Sausage Breakfast Casserole perfect for a family brunch or weekend breakfast, featuring cooked sausage links, hash browns, cheese, eggs, and onions grilled to perfection for a smoky flavor.

Ingredients

Sausage

  • 12 breakfast sausage links (cooked)

Base

  • 30 ounces frozen hash browns (thawed)

Dairy & Eggs

  • 1 ½ cups marble jack cheese (shredded), divided
  • 12 large eggs
  • 1 cup milk

Vegetables & Seasonings

  • ½ cup yellow onion (diced)
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat Grill: Set your grill to 350 degrees Fahrenheit and allow it to reach temperature for an even cooking environment.
  2. Prepare Egg Mixture: In a large bowl, whisk together the eggs, salt, ground black pepper, 1 cup of shredded marble jack cheese, diced onions, and milk until fully combined.
  3. Cook and Prepare Sausage: Grill the sausage links for 10-15 minutes until heated through. Once cool enough to handle, cut the sausages into 1-inch pieces. This step can be done ahead of time and stored in the refrigerator.
  4. Assemble Casserole: Lightly spray a 9-inch by 13-inch disposable aluminum pan with non-stick spray. Spread the thawed hash browns evenly on the bottom of the pan, then evenly distribute the sausage pieces over the hash browns.
  5. Add Egg Mixture and Cheese: Pour the prepared egg mixture evenly over the sausage and hash browns in the pan. Sprinkle the remaining ½ cup of shredded cheese evenly on top.
  6. Grill Casserole: Place the pan on the grill over indirect heat at 350 degrees Fahrenheit. Grill for about 45 minutes or until the center is set and the casserole is cooked through.

Notes

  • You can prepare the sausage pieces a day or two in advance to save time on cooking day; just keep them refrigerated.
  • Make sure to thaw hash browns before assembling to avoid excess moisture in the casserole.
  • Cooking over indirect heat is essential to prevent burning and ensure even cooking of the casserole.
  • Use a disposable aluminum pan for easy cleanup, especially when grilling outdoors.
  • Adjust seasoning to taste if you prefer more or less salt and pepper.
