Ready in just 30 minutes, this easy skillet dish makes for a satisfying dinner perfect for busy weeknights.

Ingredients

Sausage and Protein

  • 12 oz cooked sausage (such as cajun sausage, andouille sausage, or smoked sausage)

Vegetables

  • 2 cup corn kernels (from 3 ears, completely cooked)
  • 1 large red bell pepper, diced
  • 1 large zucchini, sliced

Other Ingredients

  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • fresh cilantro, chopped (for topping)

Instructions

  1. Cook sausage: Heat 1 tablespoon of olive oil in a cast-iron skillet over medium heat. Slice the cooked sausage into coins and add them to the skillet. Cook for 5 minutes on one side, then flip and cook for another 3 minutes on the other side. Remove the sausage to a large plate. Leave some of the sausage oil in the pan, setting aside any excess oil in a small heat-proof bowl.
  2. Prepare bell pepper: In the same skillet, add the diced red bell pepper. Cook on medium heat for about 4 minutes. Add some of the reserved sausage oil if needed to prevent sticking. Remove the cooked bell pepper to the plate with the sausage.
  3. Cook zucchini: Add the sliced zucchini to the skillet and cook for around 3 minutes on medium heat. Use reserved oil as necessary to keep vegetables from sticking.
  4. Prepare corn kernels: Slice the corn kernels off the cob with a knife.
  5. Combine and reheat: In the same skillet, combine the cooked sausage, bell pepper, zucchini, and corn kernels. Stir well to mix and add the reserved sausage oil. Sprinkle with chili powder and reheat the mixture on low heat until warmed through.
  6. Finish and serve: Remove from heat and top with chopped fresh cilantro. Serve immediately.

Notes

  • The sausage used is usually salty enough, so additional salt might not be necessary—season to taste.
  • Using a cast-iron skillet helps achieve even cooking and adds flavor from the sausage oils.
  • Feel free to substitute with your choice of cooked sausage varieties.
  • This dish is best served fresh but can be reheated gently on stovetop.
