Ingredients

Salmon and Seasoning

  • 16 oz. salmon fillet
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons Szeged Fish Rub
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder

Tortillas

  • 6 low-carb tortillas (preferably Mr. Tortilla tortillas)

Mexican Slaw

  • 2 cups thinly sliced green cabbage
  • 1 cup thinly sliced red cabbage
  • 3 green onions, thinly sliced
  • 1/4 cup chopped cilantro (optional)

Slaw Dressing

  • 4 tablespoons mayonnaise
  • 3 tablespoons fresh-squeezed lime juice
  • 1/2 teaspoon Green Tabasco Sauce (or more to taste)
  • Vege-Sal or salt to taste

Instructions

  1. Thaw Salmon: If using frozen salmon, let it thaw overnight in the refrigerator for best results.
  2. Season Salmon: In a small bowl, mix the fish rub, ground cumin, and chili powder. Rub the salmon fillet on both sides with olive oil, then coat evenly with the spice mixture.
  3. Prepare Slaw Ingredients: While salmon comes to room temperature, thinly slice green and red cabbage, slice green onions, and chop cilantro if using.
  4. Make Dressing: Combine mayonnaise, fresh lime juice, Green Tabasco Sauce, and Vege-Sal or salt in a bowl to create the slaw dressing.
  5. Assemble Slaw: Toss together the cabbage and green onions, then mix in about half of the dressing, stirring well. Fold in chopped cilantro if desired and toss again.
  6. Reserve Dressing: Save the remaining dressing to drizzle over the cooked salmon and tacos later.
  7. Preheat Air Fryer: Preheat your Air Fryer to 400°F (204°C) to prepare for cooking the salmon.
  8. Cook Salmon: Place the seasoned salmon on parchment paper or directly in the Air Fryer basket. Cook for 6 minutes without turning, until salmon is cooked through and flakes easily.
  9. Heat Tortillas: While the salmon cooks, warm each tortilla in a dry hot pan for 30-60 seconds, turning once to heat evenly.
  10. Shred Salmon: Remove salmon from the Air Fryer and place it in a bowl. Use a fork to shred the salmon into bite-sized pieces.
  11. Assemble Tacos: Fill each warm tortilla with a portion of slaw and shredded salmon. Drizzle with extra dressing kept aside for added flavor.
  12. Serve: Serve the salmon tacos immediately, offering extra lime wedges and additional dressing for guests to customize their tacos.

Notes

  • For best flavor, use low-carb tortillas such as Mr. Tortilla brand.
  • Cilantro is optional but adds a fresh, herbal note to the slaw.
  • You can also cook the salmon on the grill or roast it in the oven if you prefer, following similar seasoning and cook time guidelines.
  • Adjust the amount of Green Tabasco Sauce in the dressing according to your desired spice level.
