Ingredients

Sriracha Mayo

  • ⅓ cup mayonnaise
  • 1 teaspoon sriracha, plus more to taste
  • 2 teaspoons rice vinegar

Salmon and Glaze

  • 1 tablespoon toasted sesame oil
  • ⅔ cup soy sauce
  • ½ cup rice vinegar
  • ¼ cup honey
  • 6 garlic cloves, minced
  • 1 tablespoon minced fresh ginger
  • 1 (1-pound) salmon fillet, cut into 4 pieces

Other Ingredients

  • 4 cups cooked brown rice
  • 1 English cucumber, sliced
  • 1 avocado, pitted and sliced
  • 2 sheets nori, cut into triangles
  • Sesame seeds, for serving (optional)

Instructions

  1. Make the sriracha mayo: In a small bowl, combine the mayonnaise, sriracha, and rice vinegar. Stir until smooth and set aside for serving.
  2. Prepare the salmon glaze: In a separate small bowl, mix together the soy sauce, rice vinegar, honey, minced garlic, and minced fresh ginger to create the glaze.
  3. Sear the salmon: Heat the toasted sesame oil in a large skillet over high heat. Add the salmon pieces and sear each side for about 90 seconds until nicely browned.
  4. Cook salmon with glaze: Arrange the salmon skin-side down in the skillet. Pour the prepared soy sauce glaze over the salmon pieces. Cook for about 3 minutes, allowing the sauce to thicken slightly and the salmon to flake easily with a fork.
  5. Assemble the bowls: Divide the cooked brown rice evenly among four bowls. Top each bowl with the glazed salmon, sliced cucumber, sliced avocado, and cut nori triangles.
  6. Garnish and serve: Sprinkle each bowl with sesame seeds if desired, then drizzle with the remaining pan sauce and a spoonful of the prepared sriracha mayo. Serve immediately.

Notes

  • Use fresh salmon for best results and ensure it is cooked to a safe temperature.
  • If preferred, substitute brown rice with sushi rice or quinoa for a different texture.
  • The sriracha mayo can be adjusted according to your preferred spice level.
  • To save time, you can prepare brown rice ahead of time or use pre-cooked rice.
  • Optional garnishes like pickled ginger or chopped scallions can enhance the bowl further.
