A delicious and nutritious Salmon Frittata with Sweet Potato, combining tender sweet potato cubes, flaky salmon, fresh spinach, and creamy Greek yogurt in a baked egg dish perfect for breakfast or brunch.

Ingredients

Vegetables and Protein

  • 1 tbsp olive oil
  • 1 medium sweet potato (peeled and cut into 1" cubes)
  • 1/4 cup red onion (diced)
  • 1 1/2 cups cooked salmon (separated into chunks)
  • 1 1/2 cups fresh baby spinach leaves (chopped)

Egg Mixture

  • 6 large eggs (beaten just until whites and yolks are combined)
  • 1/4 cup Greek yogurt
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped parsley or dill (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the frittata.
  2. Heat Oil: In a 10-inch oven-proof skillet, such as cast iron, heat the olive oil over medium-high heat.
  3. Cook Sweet Potato: Add the cubed sweet potato to the skillet and cook, stirring often, until they soften, about 4 minutes.
  4. Add Red Onion: Add the diced red onion and cook for another minute until the sweet potatoes are tender and slightly caramelized.
  5. Add Salmon and Spinach: Remove the skillet from heat. Evenly distribute the cooked salmon chunks and chopped spinach over the sweet potatoes and onions.
  6. Prepare Egg Mixture: In a bowl, whisk together the eggs, Greek yogurt, salt, and black pepper until fully combined.
  7. Pour Egg Mixture: Pour the egg mixture evenly over the ingredients in the skillet. Gently shake the pan to ensure even distribution.
  8. Bake: Place the skillet in the center of the preheated oven and bake for 15-20 minutes, or until the edges pull away from the pan and the middle is set.
  9. Garnish and Serve: Remove from oven, garnish with chopped parsley or dill, cut into wedges, and serve warm.

Notes

  • Use an oven-proof skillet like cast iron to go from stovetop to oven with ease.
  • Ensure sweet potatoes are cut into even cubes for uniform cooking.
  • Make sure salmon is cooked and flaked before adding to the skillet.
  • You can swap Greek yogurt for sour cream if desired, but it may affect the texture slightly.
  • Feel free to use dill or parsley based on your flavor preference for garnish.
