Perfectly al dente spaghetti is tossed in this flavorful sauce and finished with creamy parmesan cheese for a comforting, classic Italian dish ready in just 30 minutes.

Ingredients

Spaghetti

  • 500g spaghetti

Tomato Sauce

  • 2 cups cherry tomatoes, halved
  • 2 cans chopped tomatoes (400g each)
  • 6 garlic cloves, thinly sliced
  • ¼ cup olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 handful fresh basil, finely chopped

Finishing

  • 2 cups freshly grated parmesan cheese
  • Optional: chili flakes and/or chili oil for heat

Instructions

  1. Cook Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set it aside.
  2. Prepare Garlic Oil: In a large deep skillet or saucepan, heat the olive oil over medium heat. Add the thinly sliced garlic and cook until it becomes just golden and fragrant, being careful not to burn it.
  3. Cook Tomatoes: Add the halved cherry tomatoes to the pan and cook for 3 to 4 minutes until they start to soften and burst. Then add the canned chopped tomatoes. Stir well and let the sauce simmer for 10 to 15 minutes, stirring occasionally, until it thickens slightly. Season with salt and freshly ground black pepper. Stir in the chopped basil and let the sauce simmer for another 2 to 3 minutes.
  4. Toss Pasta in Sauce: Add the drained spaghetti back into the sauce. Toss everything together, adding reserved pasta water gradually as needed to loosen the sauce to your preferred consistency.
  5. Add Parmesan: Turn off the heat and fold in the freshly grated parmesan cheese until it melts into a creamy texture throughout the pasta. Adjust the seasoning if necessary.
  6. Serve: Plate the pasta hot, topping with extra fresh basil or parmesan if desired. For a spicy kick, add chili flakes and/or chili oil.

Notes

  • Reserve pasta water to help loosen the sauce and improve sauce adherence to the spaghetti.
  • Be careful not to burn the garlic as it will turn bitter and affect the flavor.
  • Add chili flakes or oil for optional heat according to your taste preference.
  • Use fresh basil for the most vibrant herbal flavor.
  • Parmesan cheese should be freshly grated for the best melting and taste.
