This Roasted Chickpeas recipe offers a deliciously crunchy and healthy snack that’s easy to prepare at home. Featuring chickpeas roasted to crispy perfection with olive oil and a variety of optional seasonings, it’s a versatile treat perfect for a nutritious bite or salad topper.

Ingredients

Main Ingredients

  • 3 cups chickpeas (from 2 - 15 ounce cans)
  • 1 tablespoon olive oil (or coconut oil)
  • 1 teaspoon salt

Optional Seasonings

  • Smoked paprika
  • Garlic powder
  • Cumin
  • Ground coriander
  • Sumac
  • Chili powder

Instructions

  1. Remove the skins: Place the cooked chickpeas in a bowl of water and gently rub them to loosen the skins, which will float to the top. Pour off the water along with the loosened skins. Repeat this process until most of the skins are removed, improving the texture and crispiness of the roasted chickpeas.
  2. Dry the chickpeas: Drain the chickpeas in a colander and spread them out on a clean towel. Gently pat and rub the chickpeas dry, picking out any remaining peels. Then place them on a baking sheet (without parchment paper for better crisping) and put the sheet in the oven as it preheats to 350°F to help dry them out further.
  3. Drizzle with oil: Once the oven reaches 350°F, remove the baking sheet and drizzle or spray the chickpeas evenly with olive oil to ensure even roasting and crispy texture.
  4. Bake the chickpeas: Roast the chickpeas in the oven for 45 minutes, stirring and rotating the baking sheet every 15 minutes to promote even cooking and prevent burning. The chickpeas should become dry, crispy, and lightly toasted. If they need extra crispness, turn off the oven, crack the door open, and leave the chickpeas inside for an additional 5 to 10 minutes to finish drying out. They will continue to crisp as they cool.
  5. Season: While still warm, toss the roasted chickpeas with salt and any desired seasonings such as smoked paprika, garlic powder, or chili powder. Store at room temperature uncovered for a day to maintain their crispiness. After that, keep any leftovers sealed in an airtight container. Enjoy them fresh for the best texture and flavor.

Notes

  • Removing the skins improves the texture and enhances crispiness.
  • Drying the chickpeas before roasting is essential to avoid sogginess.
  • Use a light hand with oil to prevent greasiness while still promoting even roasting.
  • Fear not if chickpeas aren’t fully crispy right out of the oven; they will crisp up more as they cool.
  • Adjust seasoning to your preference for different flavor profiles.
  • Store in an airtight container to keep them fresh for up to 2 days.
