These delightful Ritz Cracker Cookies are a simple, no-bake treat combining salty and sweet flavors. Creamy peanut butter sandwiched between Ritz crackers is dipped in melted white chocolate and decorated with festive holiday sprinkles, making them perfect for holiday parties and easy snacking.

Ingredients

Cookies

  • 60 Ritz crackers
  • 1/2 cup creamy peanut butter

Coating and Decoration

  • 6-8 oz. white chocolate chips or candy melts
  • Holiday sprinkles
  • Optional: 1-2 tablespoons coconut oil (to thin chocolate)

Instructions

  1. Assemble the cookie sandwiches: Spread 30 Ritz crackers out on a parchment-lined baking sheet. Spoon about 1/2 teaspoon of creamy peanut butter into the center of each cracker and top with a second cracker, gently pressing down to create a sandwich. This makes 30 cookies total.
  2. Freeze to set peanut butter: Place the baking sheet with the assembled cookies in the freezer for 7-10 minutes. This chilling step helps the peanut butter firm up slightly so it won’t ooze when dipped in chocolate.
  3. Melt the white chocolate: While the cookies chill, melt the white chocolate chips or candy melts in a microwave-safe bowl. Heat in 20-second increments, stirring thoroughly after each, until smooth. If the chocolate is too thick for dipping, stir in 1-2 tablespoons of coconut oil to thin it out.
  4. Dip and decorate cookies: Working quickly, dip one side of each cookie into the melted white chocolate or use a spoon to spread the coating evenly over the cookie. Immediately sprinkle festive holiday sprinkles on top, then lay the cookies flat on a baking sheet. Repeat this for all cookies.
  5. Allow chocolate to set: Leave the coated cookies on the baking sheet at room temperature for about 1 hour until the chocolate hardens completely.
  6. Store: Transfer the set cookies into an airtight container and refrigerate. They keep well for up to one week.

Notes

  • For a thinner chocolate coating, coconut oil helps make the chocolate easier to dip.
  • Use white chocolate candy melts as a convenient alternative to chips.
  • Refrigerate the cookies to maintain freshness and firmness.
  • Sprinkles add a festive touch; feel free to customize with your favorite colors or shapes.
  • These cookies are no-bake and require minimal preparation, making them kid-friendly and quick to assemble.
