Ready in just 15 minutes, they make a satisfying vegetarian lunch or dinner that uses simple pantry staples.

Ingredients

Quesadilla Ingredients

  • 4 medium flour tortillas (about 8″ wide)
  • 1 (15oz) can refried beans (or about 1 ½ cups homemade refried beans)
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/4 cup pickled jalapeños (optional)
  • 1 tablespoon olive oil or butter

Instructions

  1. Prepare the refried beans: In a small bowl, combine the refried beans with the taco seasoning thoroughly to evenly distribute the flavors.
  2. Assemble the quesadillas: Spread about 1/3 cup of the seasoned refried beans over one half of each tortilla to create a semicircle base.
  3. Add cheese and jalapeños: Sprinkle 1/4 cup of shredded cheese over the beans on each tortilla, then add a few pickled jalapeños if you desire some heat and tang.
  4. Heat the skillet: Place a large skillet over medium heat and add a little olive oil or butter to prevent sticking and encourage browning.
  5. Cook the quesadillas: Carefully place two quesadillas at a time into the skillet. Cook each side for 2-3 minutes until the tortilla is golden brown and the cheese inside has melted thoroughly.
  6. Repeat and serve: Remove cooked quesadillas and repeat the frying process with the remaining quesadillas. Serve warm and enjoy.

Notes

  • You can substitute the refried beans with homemade refried black or pinto beans for extra freshness.
  • Choose your favorite cheese blend for different flavor profiles – Monterey Jack adds creaminess, while cheddar offers sharper taste.
  • For a vegan option, use vegan cheese and olive oil instead of butter.
  • If you prefer spicier quesadillas, add more jalapeños or a dash of hot sauce.
  • Serve with sour cream, salsa, or guacamole for added flavor.
